a) The product I chose for this discussion is Bush’s Vegetarian Baked Beans. The product
contains more complex carbohydrates than simple carbohydrates. Legumes such as navy
beans, which are contained in the product, contain starches and dietary fiber that are part
of complex carbohydrates. Although the product contains added sugars, which are
considered simple carbohydrates, the total added sugars in grams are less than the total
complex carbohydrates in grams per serving.
b) I found an online source that claimed that wheat, processed or unprocessed, is the leading
contributor to the current obesity and diabetes epidemic in America. According to Davis
(2011), genetic alterations of wheat grains in the last fifty years have resulted in an
unhealthy wheat grain whose glycemic index, when consumed, is higher than that of
sucrose, chocolate, and caramel. The source also asserts that repeated wheat consumption
increases blood glucose to exceedingly high levels for a long time, resulting in the
accumulation of fat in visceral organs and insulin resistance. Over time, these factors can
lead to diabetes, obesity, and heart disease.
c) The article is written by a cardiologist who directs a heart disease prevention and reversal
program and has a doctor of medicine degree from the SLU School of Medicine. The
article has also been reviewed by a medical physician in integrative medicine with a
doctor of medicine degree from the Universidad del Norte. Based on the experience of
the author and the scientific evidence quoted in the article, I believe the source can be
trusted.
