People credited with this unit standard are able to: demonstrate knowledge of the blending process and blending equipment; prepare blending equipment; make adjustments to and operate blending equipment; and comply with organisational and statutory hygiene and safety requirements in a smallgoods manufacturing operation. Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. Smallgoods – smoked, cured or otherwise processed meat based products such as bacon, ham, sausages, continental meats and salami lines. Evidence requirements 1.1 Blending equipment and accessories are described in terms of purpose and use. Range 1.4 evidence of four is required. Common faults that occur in the blending process are described in terms of terms of type of meat, quality and addition of additives. Outcome 2 Prepare blending equipment in a smallgoods manufacturing operation. Evidence requirements 2.1 Blending equipment is prepared in accordance with organisational requirements. 2.2 Faults are recognised and reported to ensure equipment is maintained to an operating level in accordance with organisational requirements. 2.3 Equipment and tools are used in accordance with manufacturer’s specifications. Outcome 3 Make adjustments to and operate blending equipment in a smallgoods manufacturing operation.
