People credited with this unit standard are able to: identify and describe food safety requirements in the meat processing industry; and explain workplace hygiene requirements in the meat processing industry. Evidence requirements 1.1 Five causes of product contamination are identified and described in terms of their impact on meat products. Range 1.2 evidence is required from one area in slaughter and dressing or further processing. Measures to prevent potential causes of contamination are identified and described in accordance with organisational and statutory requirements. Range measures address the five causes identified above. Outcome 2 Explain workplace hygiene requirements in the meat processing industry. Evidence requirements 2.1 Hygiene requirements relating to company supplied clothing and equipment are explained in accordance with organisational and statutory requirements. Range 2.2 2.3 requirements include but are not limited to – locker compliance (procedure), hair containment, jewellery, requirements when entering an ‘edible’ department.
