This unit standard is designed for experienced knife tutors and those responsible for evaluating and recording the consistency of meat processing workers in maintaining knife sharpness.

2.2 Safety equipment is worn when loading and unloading blades in accordance with company specifications.
2.3 Knife is securely clamped at the right bevel for its intended use without excessive force according to organisational requirements.
2.4 Knives are evaluated in accordance with organisational requirements.
2.5 Individual test results are recorded and documented according to organisational requirements.
