Classification Hospitality > Food Safety Available grade Achieved Explanatory notes 1 Definitions `food business – an operation that engages in the production, manufacture, preparation, packaging, storage, handling, transport, distribution, or sale of food whether for profit or not; food safety programme – a programme based on the principles of Hazard Analysis Critical Control Point (HACCP), designed to identify and control food safety risk factors, in order to establish and maintain food safety. Risks may relate to production, manufacture, preparation, packaging, storage, handling, distribution, or sale of food. 2 Legislation and regulations to be complied with include but are not limited to New Zealand Food Safety Authority (NZFSA) guidelines and/or industry codes of practice (available from www.nzfsa.govt.nz/processed-food-retail-sale/index.htm), Food Hygiene Regulations 1974, Food Act 1981 and any food safety programmes recognised by this Act, Health and Safety in Employment Act 1992, and any subsequent amendments. 3 All outcomes are to be assessed by observation and/or questioning as appropriate. Outcomes and evidence requirements Outcome 1 Develop a food safety programme for a food business. Evidence requirements 1.1 The development of the food safety programme is consistent with legislation, NZFSA guidelines and/or industry codes of practice. Outcome 2 Implement the food safety programme within the food business. Evidence requirements 2.1 Implementation of the food safety programme is completed according to NZFSA guidelines and documented programme. Outcome 3 Verify the operation of the food safety programme within the food business. Evidence requirements 3.1 Verification of the food safety programme is carried out in accordance with NZFSA guidelines and/or industry codes of practice. 3.2 Records are maintained in accordance with the food safety programme. This unit standard is expiring. Assessment against the standard must take place by the last date for assessment set out below.
