NZQA registered unit standard 26294 version 3 Page 1 of 3 Title Demonstrate knowledge of Meat Industry Standard 5 – Slaughter and Dressing Level 4 Purpose Credits 10 This unit standard is for supervisors and compliance staff who are employed in a meat processing operation and required to have in-depth knowledge of the slaughter and dressing process. People credited with this unit standard are able to demonstrate knowledge of: MIS 5 and slaughter and dressing requirements in a meat processing operation; and the outcomes of noncompliance with MIS 5. Evidence requirements 1.1 MIS 5 is described in terms of purpose in a meat processing operation. Range components include but are not limited to – control of slaughter and dressing, overseas inspection requirements, status of animals for slaughter, humane slaughter, general requirements, collection of blood, delayed evisceration, inspection requirements, inspection procedures, disease and defect indicators, final carcass inspection, viscera table or gut buggy operations, retain rails, final dressing procedures, procedures for defective animals, cases for veterinary disposition, branding with the inspection legend, pet food carcasses, specific controls for individual species. 1.3 The procedures that minimise the risk of contamination are described in terms of components of the process. 1.4 The technical reasons for MIS 5 are described in terms of slaughter and dressing requirements. Range requirements include but are not limited to – control of slaughter and dressing process, overseas inspection requirements, state of animals for slaughter, general requirements, humane slaughter, collection of blood, delayed evisceration, inspection requirements, inspection procedures, disease and defect indicators, final carcass inspection, viscera table operations, retain rails, final dressing procedures, procedures for defective animals, cases for veterinary disposition, branding with the inspection legend, pet food carcasses, specific controls for individual species. Outcome 2 Demonstrate knowledge of the outcomes of non-compliance with MIS 5. Evidence requirements 2.1 Non-compliance is analysed in terms of its impact and consequences on the product. 2.2 Corrective and preventative actions are formulated to meet MIS 5 requirements and in accordance with organisational requirements.
