This entry level unit standard is for people who are employed in
the cooked meat department at meat processing plants.
People credited with this unit standard are able to: prepare
packaging materials; pack individually wrapped cuts; weigh,
label and seal cartons; demonstrate team-work; and comply
with organisational and statutory hygiene and safety
requirements.

Definitions

Company specifications – product specifications set by the company relating to cuts,
weights, presentation, and packaging.
Customer specifications – product specifications set by clients relating to cuts,
weights, presentation, and packaging.
Operator – the candidate being assessed against this unit standard.

Outcomes and evidence requirements
Outcome 1
Prepare packaging materials.
Evidence requirements
1.1
Packaging materials are assembled, identified and handled in accordance with
company and customer specifications.
1.2
Carton liners are inserted in accordance with organisational requirements.
1.3
The supply of prepared packaging material is consistent with the requirements
of packing workers.
1.4
The preparation of packaging material is conducted in an environment that is
maintained in a clean and dust-free condition.
1.5
Stocks of packaging materials are maintained at company specified levels.
Outcome 2
Pack individually wrapped cuts.
Evidence requirements
2.1
Product temperature meets company tolerance specifications.
2.2
Individually wrapped cuts are branded to company and customer specifications.
2.3
Cuts are bagged and wrapped to company and customer specifications.
2.4
Shrink wrapping and vacuum packaging of individual cuts are completed to
company, customer and manufacturer’s specifications.

Sealing methods comply with company specifications and manufacturer’s

The preparation, operation and maintenance of equipment used in weighing’
labelling and sealing cartons meet organisational and manufacturer’s
requirements.

Packaged products are dispatched in accordance with organisational
requirements.

Co-workers are not endangered through the operator’s methods and

Contaminated meat products, surfaces, machinery and equipment are handled
in accordance with organisational and statutory requirements.
5.4
Unsafe and unhygienic conditions are identified and reported to supervisory
staff in accordance with organisational requirements.

and statutory requirements.
