Receive and prepare raw materials for rendering in the meat

This entry level unit standard is for people who are employed in
the rendering departments at meat processing plants and who
are required to receive raw materials and prepare raw materials
for rendering.
People credited with this unit standard are able to: receive raw
materials; prepare raw materials; and comply with
organisational and statutory hygiene and safety requirements,
during rendering operations.

Definitions
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Raw materials – any animal tissue intended as a by-product that has not undergone
any treatment or has not been modified in any way. Raw materials may be
refrigerated or stabilised by chemical treatment.

Evidence requirements
1.1
Received raw materials are identified and transferred to appropriate storage
bins in accordance with organisational and statutory requirements.
1.2
Condition of raw materials is evaluated to determine suitability for rendering in
accordance with organisational requirements.
1.3
Raw material documentation complies with organisational and statutory
requirements.
1.4
Preservation of raw materials prior to processing is completed in accordance
with organisational requirements.
Outcome 2
Prepare raw materials for rendering.
Evidence requirements
2.1
Raw materials are prepared for rendering in accordance with organisational
requirements.
2.2
Contaminated raw materials are identified and reported to supervisory staff in
accordance with organisational requirements.
2.3
Raw materials are transferred from storage to preparation equipment in
accordance with organisational requirements.

Comply with organisational and statutory hygiene and safety requirements during
rendering operations.
3.1
Company supplied clothing, and hygiene and safety equipment are worn and
used in accordance with organisational and statutory requirements.
3.2
Work methods comply with specified organisational and statutory requirements
to minimise the risk of product contamination and injuries to the operator and
others.
3.3
Contaminated meat products, surfaces, machinery and equipment are handled
in accordance with organisational and statutory requirements.
3.4
Unsafe and unhygienic conditions are identified and reported to supervisory
staff in accordance with organisational requirements.

Equipment, operator and work area cleanliness complies with organisational
and statutory requirements.
