Exploring the evolution of hospitality and tourism industry will allow for a deeper understanding of how awareness of the past can always help to guide researchers and
practitioners within the hospitality industry today. This course aims to
 Explore and examine the origins of the underlying principles and practices of hospitality and tourism.
 Systematically analyse the evolution of hospitality and tourism
 Develop understanding of the roles of 'guest' and 'host' as we recognise them today
 Demonstrate the social, economic and geographical influences from Classical Antiquity to the Renaissance
 Foster analytical and research skills in addition to proactive and reactive skills in the discipline.

16. Syllabus
The course provides for systematic analysis of key dimensions of hospitality and tourism and its evolution. Advanced deconstruction of the hospitality product realises a
deeper understanding to inform and underpin contemporary managerial approaches within this sector for both researchers and practitioners within the industry. A
comprehensive conceptual framework is established within which theoretical concepts specific to hospitality construction and production will be explored and critically
analysed. The course will be structured around (a) specialist perspectives and (b) student analysis of key research themes which might include
 Introduction: what is (critical) hospitality and tourism? How do we know it?
 Perspectives on setting and its significance.
 Ancient and Classical Hospitality.
 Commensality, Urbanity and Hospitality
 Hospitality at a national level.
 The Host-Guest Transaction.
