Happy almost 4th of July!
I hope you all have a day where you can relax, enjoy and reflect! You all
should be so thankful for every little freedom that you possess and never take
for granted what a wonderful Country we live in! We should also resolve to
take care of the land in which we live as well as take care of ourselves (weren’t
you wondering where I was going with that?)! Let’s renew our commitment to
be healthy now so that we will be here for a LONG time and can enjoy all the
benefits that are available to us!
Even if you do NOT weigh-in this week, please come to the meeting! It is so
important to get the inspiration from your peers that are experiencing the
same emotions and situations that you thought you were alone in! Mary
Louise, Lucy and Ruth are definitely thankful as they were our Biggest Losers!
Let’s all remember our next goal and work toward its completion!
Start thinking about when we want to hold our Parties and invite any friends,
relatives and enemies!

What do these words — charcoal, beer, potato salad, hot dogs, burgers, bugs and
fireworks — remind you of? That's right, July fourth is right around the corner and
throngs of people will roll out grills, dust off patio furniture, pack up picnic baskets
and attend outdoor celebrations! If you haven’t done so already, now’s the time to
plan a strategy for accommodating your favorite barbecue favorites.

Attending a holiday celebration? Here are five ways to navigate through the
offerings.
Ask how the meats were prepared.
It's no crime to ask the chef how she made her marinades and sauces; she'll be
flattered by your interest. Find out if the burgers are lean and whether the "special"
sauces involve fatty condiments.
Go easy on the coleslaw, pasta and potato salad.
These side dishes tend to be soaked in mayonnaise and oil. Better yet, bring your

Fill up on grilled fruits and vegetables.

Drink lots of water and go easy on the booze.

Fruit dip: Regular 6 oz containers of FF Vanilla yogurt and lime yogurt, 1
cup FF sour cream, 4 coconut macaroons, juice of 2 fresh limes,
Splenda to taste. Put in food processor and blend well. Serve with any
fruit … I especially love it with strawberries, cantaloupe, and green
grapes.

Barbecued Ribs
4 Pounds Pork Spareribs, Fat Removed
1/4 Cup Vinegar
1/4 Cup Worcestershire Sauce
1/4 Cup Soy Sauce
1 Sweet Onion, Chopped
4 Cloves Garlic, Crushed
Artificial Sweetener Equal To ¼ Cup Brown Sugar Or To Taste
1/4 Cup Dry Mojo Seasoning
Salt And Pepper To Taste
1 Bottle Walden Farms No Calorie Barbecue Sauce
Place the ribs in a large Ziploc bag. Combine the vinegar, Worcestershire sauce,
soy sauce, onion, garlic, brown sugar, Mojo seasoning, salt and pepper in your
blender and blend until smooth.
Pour into the bag.
Seal the bag, shake to coat and marinate the ribs overnight, turning often.
Prepare your grill and cook your ribs slow and low 3-4 hours until done.
Brush on the barbecue sauce about 1 hour before the ribs are done.

ParmesanChicken (Serves 4 - 4 PP Values)
4 small boneless skinless chicken breast halves (1 lb)
1/4 cup Zesty Italian Reduced Fat Dressing
1/4 Cup Grated Parmesan Cheese
Place all ingredients in large plastic baggie. Seal and turn bag over several times to
coat chicken. Lay flat in fridge for 30 minutes to marinate.
Preheat oven 425F. Remove chicken from marinate and discard bag and left over
marinade. Place aluminum foil in pan and spray. Place chicken on foil. Bake 20-30
minutes or until cook through (165 degrees).
