Slicing them is fastest on a classic French- or Japanese-style mandoline, but you can also use a vegetable peeler. Ingredients: 1-1/2 pounds rainbow carrots (preferably a mix of long and short ones) 4 ounces pea shoots (find at farmers’ markets and Asian markets) 2 cups sugar snap peas 1/3 cup extra-virgin olive oil 1/4 cup Meyer lemon juice 1 large garlic clove, minced About 1/2 tsp. kosher salt 1/4 teaspoon pepper 1 cup crumbled sheep’s – or goat’s-milk feta cheese 3/4 cup mint leaves, cut into slivers 3 cups shredded cooked chicken Preparation: 1. Scrub carrots gently (so you don’t lose the bright outer color), using a brush under running water. With a mandoline or vegetable peeler, cut thin lengthwise ribbons to make 1 qt.; discard ends and tough cores. 2. Put dark and light carrot ribbons in separate bowls of ice water and soak about 15 minutes to crisp. Drain, roll in kitchen towels, and pat dry. 3. Discard tough or thick stems from pea shoots and tear sprigs into 4- to 5-in. pieces. Pull strings from straight sides of snap peas, then thinly slice peas lengthwise. In a large bowl, whisk oil, lemon juice, garlic, 1/2 tsp. salt, and the pepper. 4. Add carrots, pea shoots, snap peas, feta, mint, and chicken to bowl and toss gently. Season with more salt if you like. Spring Garden Strawberry Salad Spring Garden Strawberry Salad celebrates the sweet taste of spring with fresh ingredients such as fresh sugar snap peas, baby arugula, strawberries, cucumber, and baby English peas. Ingredients: 1-1/2 cups trimmed fresh sugar snap peas (about 5 oz.) 1 (4-oz.) package baby arugula 2 cups sliced fresh strawberries 1 cup seeded and chopped English cucumber 3/4 cup frozen baby English peas, thawed 4 ounces Gorgonzola cheese, crumbled 6 cooked bacon slices, coarsely chopped Sweet Basil Vinaigrette Preparation: 1. Arrange sugar snap peas in a steamer basket over boiling water. Cover and steam 1 to 2 minutes or until crisp-tender. Plunge peas into ice water to stop the cooking process; drain. Cut peas diagonally in half. 2. Toss together arugula, next 5 ingredients, and sugar snap peas on a large serving platter. Serve with Sweet Basil Vinaigrette. Here’s 10 spring cleaning tips sure to get your place in tip-top shape! 1. Formulate A Plan & Set Reasonable Goals Jot down the areas of your home that you need to clean, come up with a plan and be sure to budget in time for distractions so you won’t get discouraged after just a few hours cleaning. In essence, make a reasonable plan of attack that has at least a 98% chance of being accomplished! 2. Check For Cleaning Supplies There is nothing more frustrating than to start a project (or your spring cleaning) only to find that you’re out of supplies. If you’re not into chemically laden cleaners, try white vinegar, baking soda and Thieves Cleaner for cleaning aids. 3. Involve Your Children (or work while the littlest are napping!) It’s great to involve children in age-appropriate cleaning tasks. It teaches them to pick up and how to keep things organized, so when they leave the nest, they can keep their own abodes neat and tidy (we hope!) For the littlest ones that would only pull everything apart behind you, wait till naptime before cleaning. 4. Tackle One Area At A Time It’s exciting to get started cleaning and sometimes you can get distracted with various projects throughout the house. But, it will be very helpful and sanity-saving if you work on one area at a time. Piles of stuff will migrate to other rooms, but those can be tackled when you get to them. 5. Declutter Before Cleaning It is frustrating to be ready to dust an area only to realize that you have to move 12 knick-knacks, 10 pieces of junk mail, and broken crayons before you can get started. Save yourself a headache and get rid of the garbage and extraneous clutter before cleaning! 6. Use Bins To Organize The “Get-Rid-Of” Stuff Instead of just dividing up things into separate piles that will likely get knocked over or mixed up, use plastic bins to keep them organized. Like bins for garage sale items, items to donate, garbage and things that need to be returned to others. 7. Open The Windows For Fresh Air Spring air is wonderful (minus the pollen, of course). After being shut up inside for months, it is so refreshing to open the windows and have fresh air flowing through the house. 8. Clean Each Room From Top To Bottom Let gravity make your job easier by working with it! Start at the ceiling by dusting the ceiling fan or light fixture then get all the cob webs off the crown molding and corners. Work your way down the walls, over the furniture, all the way to the baseboards and flooring. 9. Change Up Your Accessories For A New Look You don’t have to redecorating necessarily, but just freshen up things a little bit. Since it’s Spring, try switching out heavy, darker items with lighter and brighter accessories. 10. Design A Daily Cleaning Schedule After all your hard work is done and your house looks like it belongs on a magazine cover, make sure that you have a good cleaning schedule in place. Set small daily tasks that will help keep your house in order until next Spring…or until you decide to deep clean your house again. How To Manage Spring Allergies Over the Counter Spring allergy relief is within your reach – on your local drugstore’s shelves. To start, take an over-the-counter, nonsedating antihistamine, such as a generic form of Claritin every morning. If your nose remains congested, add a saline nasal rinse or oral decongestant pill (if you don’t have high blood pressure). You can also take a long-acting decongestant nose spray for a few days, if necessary. If these treatments don’t clear your nasal congestion, then you’ll need to see your doctor and ask about adding a corticosteroid nose spray. Other over-the-counter tools for managing your allergies are lozenges to soothe a sore throat, which can be irritated by postnasal drip from your runny nose, and antihistamine eye drops to relieve itchy, watery eyes. Look for antihistamine on the label when shopping for eye drops; these treat the root of your allergy symptoms. If your allergies still persist, then it’s time to throw in the towel and call a doctor that specializes in allergy. Also, if you have allergies to any of the above medications or are not sure, do not take them. Go to a allergy specialist to help with your treatment. 10 Tips To Avoid Tick Bites With the spring come the ticks! Finding an engorged tick on your body is never fun. Ticks do carry diseases, which might make you think twice about your next hike into the woods. You don’t have to avoid the outdoors, though. Your first line of defense is avoiding their bites. Follow these 10 tips to avoid ticks, and more importantly, tick bites, when you head outdoors. 1. Use a product with 20% DEET or higher on both skin and clothing. 2. Apply permethrin to clothing, hiking boots, tents, and camp chairs. Sold under Permanone and Duranon names. 3. Wear light-colored clothing. 4. Wear long pants with sneakers or hiking boots. Tuck your pant legs into your socks, and keep your shirt tucked into your waistband 5. Outfit yourself in bug repellent apparel. 6. Stay on the trail. Ticks tend to hang out in high vegetation, waiting for a passing host. 7. Avoid tick-infested places. 8. Be vigilant – do a daily tick check. Strip down and search your entire body...don’t forget your head. 9. Put your clothes in the dryer, and tumble them on highheat. Ticks can easily survive the washing machine. 10. Check your pets and your kids before letting them loose in the house. Ticks can easily drop off on carpets or furniture, where they will wait for a blood meal to come along. THE RIDDLER ?
