PAC Social Clubs
As the liaison to the Car Club this month, it
was amazing to see a room full of incredible
men and women with a common interest,
taking the first step in changing their lives.
If there is one thing I have learned in life it
is…the more you give and put yourself out
there, the more you will get in return. Social
clubs at PAC are just one small way to
enhance
your
world
because
the
opportunities afforded by your participation
are endless. As a member, you are part of
the fabric of what drives this club and you
have the power to create and do anything, no
matter how great or small. Let us be the
conduit for your new experiences and be
empowered to meet new and incredible
people that you would normally never have
known. The energy and excitement in a
room full of people contains an exhilarating
spark of newness, adrenaline, inspiration and
hope. If you have considered starting a club
or participating in one then I implore you to
take that chance and see how great life can
be once you are open to it. Looking forward

Dear Members,
It gives me great pleasure to report that our social club participation is at its highest
levels. The Women’s Golf 101 Club has been incredibly successful, continues to
grow and is still looking to recruit more members. Now that the spring weather is
here Cigar Club meetings are kicking into full gear thanks to the leadership of your
fellow member John Passantino. Social clubs are a great way to meet other members
with similar interests and if a club of your interest doesn’t exist, just reach out to us
and we will gladly get a group together.
Springtime is a great time to take advantage of Park Avenue Club’s many reciprocal
clubs, with 17 local golf clubs and 10 city clubs in Manhattan alone, your days
should be filling quickly. It’s as easy as calling the front desk receptionist and
requesting an introduction; another wonderful member benefit.
Also this spring and summer PAC will be showcased at the Madison Farmers market
with Chef demonstrations and fresh packaged goods like club made BBQ sauce,
chutneys, chili rubs and more. If you are interested in being a part of our farmers
market volunteer team and spreading the good word of Park Avenue Club and our
amazing 11 charities, then reach out and let us know.
Please save the date for Friday September 19th, 2014 to attend Park Avenue Club’s
20th Anniversary “Spirit of Giving” Gala. Our volunteer Gala Committee is off to an
incredible start and are planning what will be the event of the year. I hope to see you
there.

MONTHLY EVENTS
NEW JERSEY CIGAR FESTIVAL
Sunday, May 4th ~ 11am to 4pm ~ $150 per person
May’s Cigar Club Event will be the 2014 New Jersey Cigar Festival, now in its third year and
its second here at PAC. This event is open to the public. Ticket price includes a humidor
packed with cigars from the vendors attending the Festival, a full lunch buffet provided by our
renowned chefs, unlimited water and soda + 1 drink ticket which can be used for a beer or
glass of wine, and 2 raffle tickets. (Additional tickets for purchase at the event.) So if you
want a chance to hang with some of your favorite cigar All*Stars like Willy Herrera, Juan
Martinez from Joya and George Sosa from Alec Bradley (not to mention a chance to win the
Grand Prize in the raffle, a slot on one of the 2015 Drew Estate Cigar Safari trips), then this
very special smoking experience is not to be missed!

It’s Clinic Time!!
This month, the Women’s Golf Club is
heading to Essex Golf in Roseland for 5
weeks of amazing clinics where we will
learn the game of golf by doing and
swinging.
May 8th Week 1: TPI (Titleist
Performance Institute)…Mini evaluation
and introduction to golf.
May 15th Week 2: Full Swing…Here we
will learn proper grip and swing
technique. We will put our knowledge to
action while we practice our swing out on
the driving range.
May 22nd Week 3: Irons…6 or 7 iron,
driver or putter, so many club’s so little
time! This week we will break down
what club for what stroke.
May 29th Week 4: Short Game…we are
going to master the art of playing beyond
the drive.

June 5 Week 5: Putting…Many would
argue that this is where the game is won,
we will hone our skills and learn the art
of the putt.
The 5 week clinic is $150 which will be
paid to Essex Golf on May 8th upon
arrival. If you are unable to make one of
the clinics, there will be one make up
class available. Your friends, family,
colleagues and clients are welcome to
join you however RSVP is a must. Clubs
will be provided for you if you do not
have clubs of your own. Do not miss this

Maple Bourbon
Cherry Glazed Pheasant
WITH MAITAKE MUSHROOMS
& DANDELION GREENS
INGREDIENTS:
Maple Bourbon Cherry Glaze
1 cup maple syrup
½ cup bourbon
½ cup water
½ cup dried cherries
3 tablespoons sherry vinegar
1 shallot, small diced
1 tsp olive oil
DIRECTIONS:
Steep dried cherries in bourbon until rehydrated. In a small saucepan on
medium heat, sauté shallot in olive oil. Add cherries, bourbon, water and
maple syrup. Reduce until consistency is thick. Using a hand blender, puree
cherries until they are broken up and sauce is thicker. Add sherry vinegar.
Reduce for another 5 minutes. Let cool.
Pheasant
1 medium pheasant, about 2 lbs,
breast removed (skin on), leg and
thigh disjointed
1 tablespoon canola oil
Preheat oven to 400 degrees. Heat canola oil in a saute pan over medium
high heat. Season pheasant with salt and pepper. Brown legs and thighs
evenly and place in oven for 20 minutes. Remove pan from oven, removing
leg and thigh. Return to burner for 45 seconds. Sear skin side of pheasant
breast for 1 minute. Flip and return thigh and leg. Glaze pheasant with the
maple bourbon cherry sauce. Finish in oven for 5 to 6 minutes. Remove
pheasant from pan and plate. Brush with additional glaze and let rest.

Maitake mushrooms
Olive oil
Kosher salt
1/2 Tb butter
Minced garlic
Minced shallot
Fresh picked thyme leaves
Splash of sherry vinegar
Start the mushrooms in a cold sauté pan. Drizzle mushrooms with olive oil
and salt them. Then sauté them over medium high heat until they get
golden brown on one side. Flip them over and let them begin browning on
the other side. When they appear golden brown and delicious, add 1/2 Tb
butter, some minced garlic and shallot, and fresh picked thyme leaves and
sauté over low heat until the garlic and shallots soften. Add a splash of
sherry vinegar to the pan and shake to coat the mushrooms evenly.

Dandelion greens
Olive oil
Minced garlic
Heat a good dollop of olive oil, and a bit of the garlic, in a non-stick skillet.
Once the garlic has become flavorful, add your dandelion greens. Cook
them on medium-high until they’re nicely wilted, just like you’d cook
spinach. This will take 3-5 minutes.
