Pumpkin Spice Trend Takes Over UCF

The fall season is in full swing and pumpkin spice
is the featured flavor of autumn. Food items are
hitting the shelves. Anything from pumpkin beer
to pumpkin Oreos are now part of the trend.
Some students are happy that it’s pumpkin spice
season again. But is this flavor craze posing a
threat to our health?
UCF Health Services Dietitian Astrid Volpert
says the extra calories from these seasonal foods
and drinks
add up.
“If you go
overboard
and
you’re
having it
two and
three
times a
day because it’s seasonal, then how much extra
sugar are you putting, how much extra calories
are you putting in your body? That’s what I would
be concerned about,” Volpert says.
The Society of Flavor Chemists reports that
additives like lactones and ketones are added into
these products to add to the flavors of the nutmeg,
cinnamon, and maple flavors we associate with
pumpkin pie. There is no actual pumpkin in these
products because the vegetable is too subtle to
taste.
The best way to survive the trend? Volpert says
to add pumpkin puree to your favorite foods and
drinks during the season to cut half the fat.

Ingredients
•1/2 cup unsweetened vanilla almond milk
•3 tablespoons pumpkin puree
•1 teaspoon pumpkin pie spice
•1/2 teaspoon vanilla
•2-3 drops of liquid stevia (or sweetener of
choice)
•8 ounces brewed coffee (or 1-2 shots of espresso)
•sprinkle of cinnamon
Directions
1.
In a cup or saucepan, mix
together almond milk and pumpkin. Cook
on medium heat on the stovetop or
microwave for 30-45 seconds.
2.
Remove from heat, stir in
vanilla, spices, and sweetener, place in a
cup and use a frother to foam the milk.
You can also use a blender — just process
for 30 seconds or until foamy.
3.
Pour coffee into a large mug,
add the foamy milk mixture on top.
Sprinkle with cinnamon. Enjoy!
