• I highly encourage you to take the 1/2 unit course - Intro to Online- before taking
this course.

This Introduction to Nutrition for Health Professionals class is only for the motivated and
online-savvy student. Computer assistance will NOT be available for this course. You
are expected to already have the computer skills for an online class. Your first test to see
if you will be successful in the class is if you can register for all of the components of the
course correctly and complete your first assignment on time!
This is NOT a work-at-your-own-pace class. You will have assignments due each week.
Nutrition 210 and Nutrition 211 are parallel courses. In other words, you would not want to take
both courses as they cover the same general topics. Nutrition 211 covers more of the details of
physiology and chemistry in nutrition that individuals going into the health professions will find
valuable.

Class Specifications

• This class is fully online. There are no mandatory meetings for this class.
Student Learning Outcomes:
1. Students will analyze the nutritional adequacy of their own food intake and write a
report making recommendations to maximize nutritional status that can be applied to their
own good health.
2. Students will critically review and synthesize the findings in scientific literature and
recommend factors to improve nutritional status in at risk populations.
3. Students will assess the effect of nutritional lifestyle factors on mortality and
formulate recommendations to minimize the risk factors for chronic diseases.
4. Students will investigate nutrition information from the Internet and critique the
accuracy and reliability of the information as it applies to health care.

this course!! Do not get stuck in just one or the other! Read the instructions
below carefully.

Computer Requirements:
• You need a reliable computer (generally no more than 4 years old) with an internet connection
that will not cut you out in the middle of an exam. You must have a reliable Internet Service
Provider (ISP) offering DSL, Cable or Satellite setup.
• Cuesta e-mail account (check your Cuesta email before the beginning of the semester for
course updates).
Computer requirements to run Moodle, the web-based course management program we are using.

o 500 megahertz (MHz) processor or higher
o 256 MB RAM or higher

Course-specific waitlist procedure:
o The instructor will give add codes to wait listed students starting Sunday before classes:
 The first 10 students who are on the waitlist when notifications close Sunday
12:00 am will be emailed an opportunity to add AND
 The student must reply to the instructor’s email requesting the add code, using
their Cuesta email, BETWEEN Sunday 12:00 am and Monday 12:00 am.
o The instructor will reply with add codes on Sunday or Monday. It is the student’s
responsibility to access the course at this time. Students have until Wednesday night
(11:59 pm) to enter their add codes
o ALL students (no matter when they register), will be held to the same deadlines for this
class.
o ALL students should have read the Welcome Letter in its entirety prior to enrolling in my
DE classes and the course materials should be purchased online as soon as the student
enrolls.
o Once late add students receive an add code and submit it to become enrolled, students can
begin reading the textbook , even if they are waiting to be enrolled into Moodle.

will not be dropped from the course. Starting on day one of the semester, course information will

o This class is not a “work-at-your-own-pace” class. You have deadlines each week.
Please realize by taking this class you are committing to submitting these regular
assignments on time.
o By enrolling, you are committing to approximately 7-9 hours a week for this class.

FYI: MyCuesta Email Forwarding:
Gmail lets you automatically forward incoming mail to another address. Here's how to forward messages
automatically:
1. Click Settings at the top of any Gmail page, and open the Forwarding and POP/IMAP tab.
2. From the first drop-down menu in the Forwarding section, select 'Add new email address.'
3. Enter the email address to which you would like your messages forwarded.
4. For your security, it will send verification to that email address.
5. Open your forwarding email account, and find the confirmation message from the Gmail team.
6. Click the verification link in that email.
7. Back in your Gmail account, select the 'Forward a copy of incoming mail to...' option and select
your forwarding address from the drop-down menu.
8. Select the action you'd like your messages to take from the drop-down menu. You can choose to
keep Gmail's copy of the message in your inbox, or you can send it automatically to All Mail or
Trash.
9. Click Save Changes.
