Our January Butchers Bolognese! created by Richard Morrison INGREDIENTS: MEAT: Your local independent 1lb Beef mince 4 Pork sausages [skins removed] family butcher VEG: 2 Red onions – finely diced 2 Carrots – finely diced or grated 1 Red & 1 Yellow pepper finely diced HERBS: [Finely chopped] 8 Fresh sage leaves 3 Fresh rosemary sprigs [leaves removed 3-4 Garlic cloves – crushed 1 tsp Crushed fennel seeds 1 pinch of dried chilli flakes [optional] ½ glass each of red & white wine 1 tin of whole plum tomatoes 1 Jar of passata 2 tsp sugar Salt to taste Olive Oil Parmesan & parsley to serve shop offer was beef, and with this in mind we have included a recipe you may wish to try – a twist on the conventional Spaghetti Bolognese. METHOD: 1. Heat enough olive oil to cover a large based pan [34” deep x 12” pan] over a medium to low heat, add the chopped vegetables, herbs, chill and fennel seeds & sweat gently for 10-15 mins add the garlic , sugar & a generous pinch of salt and cook for a further 5 minutes. Turn the heat up & add the minced beef & sausages, brown the meat all over making sure to break up any large pieces with a wooden spoon or fork. 3. Add the wine & turn the heat up to full & reduce by half. 4. Add the tinned tomatoes (making sure to break them up) & passata, bring to a simmer then turn the heat right down, cover & cook gently for 2-3 hours – stirring occasionally. Check the seasoning & add more salt if required. Serve with your choice of pasta cooked ‘al dente’. Finish with fresh chopped parsley & freshly grated parmesan.
