Cut the ball in half. Try to use as few cuts as possible or you may end up with a wobbly bottom! If you are going to use an embossing or stamping effect on the dome do it before cutting the circle. Try to get it as central as possible. You may find it easier to do this holding the ball in your other hand. Don’t worry if the paste doesn't seem to shape around the ball – keep smoothing as the warmth from your hand will slowly ease it down. Make as many of the domes in advance as you need and allow time for the domes to dry before placing on the cupcake. Be careful though! Too much buttercream and the dome won’t sit flush to the cupcake and the buttercream will squish out! Not enough buttercream and the dome wont have anything to stick to! I use ½ tsp Tylo to 250g sugarpaste, although this is personal preference. With this low ratio of Tylo to sugarpaste your domes will dry firm enough to keep shape but soft enough to eat (unlike flowerpaste which is finer and dries hard). Foam balls are best! They allow the dome to dry from both sides, therefore drying quicker. Never use rubber balls in case of latex allergies, and plastic balls cause the sugarpaste to stick! If you are going to use an embossing or stamping effect on the dome do it before cutting the circle – but be careful when smoothing the dome that you don’t flatten your design! You can make as many domes as you need in advance – I always allow at least 24 hours drying time before decorating the cupcakes. HAPPY DOMING!
