Triple chocolate marble cake Recipe provided by Whitworths Sugar Preparation time: 30 minutes Cooking Time: 50–60 minutes Difficulty: Moderate Makes 1 cake, approximately 12 slices Ingredients 225g butter, softened 225g Whitworths golden caster sugar 4 large eggs 225g self-raising flour 2 tbsp milk 1 tsp vanilla extract 2 tbsp cocoa powder Chocolate Ganache: 150ml double cream 100g milk or dark chocolate Decoration: 75g white chocolate, melted Method 1. Preheat oven to 180°C / Gas Mark 4 2. Grease a 20cm cake tin and line the bottom with a circle of greaseproof paper. 3. Beat the butter and sugar together then add the eggs, one at a time, mixing well after each addition. Fold through the flour, milk and vanilla extract until the mixture is smooth. 4. Divide the mixture between 2 bowls. Stir the cocoa powder into one of the bowls. Take 2 spoons and use them to dollop the chocolate and vanilla cake mixes into the tin alternately, until all the mixture has been used up. 5. Take a skewer and use it to swirl the mixture a few times to create a marbled effect. 6. Bake for 50–60 minutes until a skewer inserted into the centre comes out clean. If the cake isn’t cooked after 1 hour, cover loosely with a piece of foil and return to the oven for 10 minutes, or until cooked through. 7. Turn out onto a cooling rack and leave to cool. 8. To make the ganache topping, heat the cream in a pan and bring up to the boil, take off the heat. Place the chocolate in a large bowl, pour over the cream and stir to melt. 9. Allow to cool slightly, the mixture will thicken. 10. Transfer the cooled cake to a serving plate and pour the ganache over the top of the cake. 11. Drizzle with the melted white chocolate to decorate. Tip This is a very rich ‘chocolaty’ cake, so you could add the zest of an orange and replace the milk with orange juice for a chocolate orange treat! This impressive cake would be the perfect centre piece for any occasion!
