AMERICA IN SONG: INTRODUCTION TO JAZZ HISTORY

This course will be a broad overview of jazz history, from the elements that led to its founding in the
last century to its current status in the American musical realm. The goals of the class are to give
students an appreciation of jazz and the way it has reflected the American nation, and the society
that gave birth to it. It will enhance their understanding of various styles and artists from the genre’s
history. Each class will feature a discussion of these elements, along with examples of the music,
some live and some recorded.

A History of Odyssey
Once upon a time, somewhere in the last century, Carolyn Dunnam
had a dream to supply local people an opportunity to enjoy Elderhostel
- type programs. Some felt they could not take a week to go elsewhere
to study, learn, and enjoy subjects perhaps passed over in earlier years.
So she called a group together to see what we thought. Could we
fund an organization, map out a program, find teachers and leaders, a
place to meet, and keep up interest year round?
The result was an affiliation with USA through the School of Continuing
Education, of which Dr. Ed Bunnell was Dean. No tax dollars were to support
us and although USA Faculty and staff selflessly gave of their time, our dues
had to support us. Our membership had to supply direction and management.
Elderhostel guided us into a "Learning in Retirement" organization managed by
our own Board of Directors under our own by-laws.
Our Organization has been in continuous operation since 1992, with an
average membership of 180. (1)

Cookies
Yield: about 4 dozen cookies
Serving size: 1 cookie
Ingredients
 1-1/4 cups all-purpose flour
 1 teaspoon baking soda
 1/2 teaspoon ground cinnamon
 1/2 teaspoon salt
 1 cup (2 sticks) butter or margarine,
softened
 1/3 cup Splenda Sugar Blend for Baking
 3/4 cup packed brown sugar
 2 large eggs
 1 teaspoon vanilla extract or grated peel
of 1 orange
 3 cups quick or old-fashioned oats
 1 2/3 cups (11-ounce package)
Nestle Toll House Butterscotch
Flavored Morsels

1. Preheat oven to 375F.

2. Combine flour, baking soda, cinnamon and salt in
small bowl. Beat butter, sugar blend, brown sugar, eggs
and vanilla extract in large mixer bowl. Gradually beat in
flour mixture. Stir in oats and morsels. Drop by rounded
tablespoon onto ungreased baking sheets.
3. Bake 7 to 8 minutes for chewy cookies, 9 to 10
minutes for crisp cookies. Cool on baking sheets 2
minutes; remove to wire racks to cool completely.
