Cookery : “Queen Cakes” Recipe: 100g margarine 100g castor sugar 150g self-raising flour 2eggs 2 drops of vanilla essence Method: 1. Pre-heat the oven to 200C/Gas mark 6 2. Cream the fat and sugar together in a bowl until pale & fluffy 3. Add eggs, little at a time beating well after each addition add 1 tablespoon of flour each time to prevent curdling 4. Add the vanilla after the final addition of egg 5. Fold in the flour in 2-3 different stages using a tablespoon DO NOT BEAT! 6. Place paper cases in tins & pile mixture into each using 2 teaspoons 7. Bake for about 15mins until golden brown 8. Cool on a wire tray & serve 9.Decorate with icing sugar
