Exploring the colloidal interactions between small molecular weight compounds (polyphenols) and macromolecules
(food grade polymers) in order to generate novel nanocolloids.
2009-2011- Researcher (Marie Curie International Incoming Fellow), Unilever R&D, Netherlands
Biopolymer based colloidal particles for structuring, stabilization and delivery of natural bioactive ingredients in food
products. Encapsulation of natural bioactives such as curcumin, silibinin, epigallocatechin gallate and quercetin in
bioploymeric nanoparticles prepared using protein (zein), resin (shellac) and polymer (methylcellulose) as carrier
materials; Characterization of colloidal/nano particles including particle size (dynamic light scattering), surface charge
(electrophoretic mobility), morphology (transmission electron microscopy), encapsulation efficiency, in-vitro release
of encapsulated actives (USP dissolution test), in-vitro digestion (pH stat method) and cell studies (CaCO2 cell
models).
