Job Title: Food Service Manager
Reports to: Camp Director
Skyland Camp for Girls is an independent camp that has been owned and operated by the women of the
same family since 1917. Located in the mountains of western North Carolina, Skyland has catered to five
generations of young women and is honored to share its rich history with future leaders.
A “traditional sleep-away camp,” Skyland offers a wide variety of activities, including archery, swimming,
horseback riding, tennis, arts and crafts, musical theater, leadership, games, fitness, hiking, culinary arts
and many others. Campers have extensive opportunity for creative, athletic and leadership achievement.
Limited to 75 girls each session, Skyland is committed to the individual camper, and the contribution that
she can bring to camp life. For campers and counselors, lasting friendships are formed, and memories of
camp days are never forgotten.
Position Purpose:
The Food Service Manager directs and manages the overall food service operation of the camp including
purchasing, preparation, nutrition, service, sanitation, security, personnel management, customer service,
and record keeping.
Essential Job Functions:
1. Manage the daily operations of the camp food and dining service including coordinating activities
between the kitchen and dining room.
 Oversee the planning and preparation of nutritionally balanced camp meals, snacks, and
pack-out food.
 Ensure the service of camp meals through directing the work of other employees.
 Ensure safe and efficient preparation and serving of camp meals.
 Coordinate menu planning for user groups as directed.
2. Oversee the inventory and ordering of food, equipment, and supplies and arrange for the routine
maintenance, sanitation, and upkeep of the camp kitchen, its equipment, and facilities.
 Maintain inventory of food and household supplies.
 Order food and kitchen supplies consistent with menus and enrollment counts.
 Maintain high standards of cleanliness, sanitation, and safety.
 Clean and maintain all food-service areas, including kitchen, dining hall, storage, kitchen
recycling.
 Inspect equipment and ensure equipment is repaired as necessary.
 Promote practices that seek to reduce waste, reuse items, and recycle as much as possible.
3. Manage all administrative and human-resource functions with regard to kitchen and dining room
employees.
 Monitor employee performance and training.
 Assist with interviewing and hiring of cooks and all kitchen staff.
 Plan, coordinate, schedule, and supervise the work of other food service staff.
Other Job Duties:
The Food Service Manager will participate in general staff training and meetings and may participate in
special celebrations or non-camp weekends. While not required, the ideal candidate may also participate
in strategic discussions on guest services, budget development and management, and capital planning.

Relationships:
 The Food Service Manager has a designated relationship with the Head Counselor and key
members of the administrative team to ensure food is ordered and prepped for outings, overnight
camping trips, significant camp dates/days and designated celebrations.
 While the Food Service Manager at Skyland serves as the primary culinary representative, this
person will also manage and work closely with kitchen and dining room staff to ensure timely food
delivery, outstanding presentation, superior service, and immaculate clean up.
 The Food Service Manager will also create and maintain positive relationships with food source
representatives (Sysco, local farmers, local sourcing options, etc.) to ensure Skyland is sourcing
and serving the best possible food at the best price.
 Positive relationships are expected with on-site maintenance and repair personnel who will assist
in proper and efficient operation of kitchen appliances.
 Parents on opening and closing days, as well as visitors who drop in.
Equipment Used
Skyland’s kitchen is small and meal prep is typically for fewer than 100 campers, staff and guests.
Equipment used includes all standard kitchen utensils and small appliances, including knives, mixers,
blenders, coffee pots, etc. Large equipment includes historic gas stove/cooktop/griddle, a smaller more
modern stove/cooktop, a dishwashing station, and food storage refrigerators and freezers.
Qualifications
 Experience in institutional food setting, large food service operation, catering (or similar) business
 Knowledge of and experience in food service including ordering, inventory, budgeting, food
preparation, family-style serving, buffet serving, cleaning and institutional kitchen equipment.
 Must hold current certification or licensure for operating a kitchen in the camp’s jurisdiction.
 Ability to work within a budget and purchase supplies efficiently.
 Experience in kitchen/dining room supervision.
 Must be able to prepare recipes according to number of diners, with limited left-overs.
 Ability to prepare meals from scratch, using wholesome ingredients.
 Strong communication skills and ability to work positively with others in a team environment.
 ServSafe Certification a plus
Knowledge, Skills, and Abilities:
 Knowledge of current health and safety laws and practices is essential.
 Knowledge of and experience in preparation of special dietary foods.
Physical Aspects of the Job:
 Ability to effectively communicate verbally and in writing.
 Physical ability to lift and carry 50 pounds.
 Visual and auditory ability to identify and respond to environmental and other hazards of the site
and facilities and camper and staff behavior.
 Physical mobility and endurance to perform tasks while standing/walking for long periods of time
(60 minutes or more).
 Ability to safely and properly use kitchen equipment.
 Ability to provide first aid and to assist campers and staff in an emergency.
