JOB DESCRIPTION:
1.0
JOB SUMMARY:
Responsible for preparing, cooking and serving of special and therapeutic diets
according to the established standards. Maintain the highest standards of hygiene and
sanitation in diet preparation area.
2.0
DUTIES AND RESPONSIBILITIES:
2.1
Follow precise, exact instruction from dietitian in preparing therapeutic diets,
formulas and supplements and the actual cooking of special diets menus.
2.2
Strict adherence to standardized recipes.
2.3
Ensure that all production quotas are met at the required time.
2.4
Maintain the highest standard of hygiene and sanitation in diet preparation
area.
2.5
Operate kitchen equipment and utensils in a safe manner, reporting any defects
or faulty equipments.
2.6
Responsible for portioning of special diets on the tray line.
2.7
Complete production forms accurately.
2.8
Coordinate with cooks to ensure the smoothness of the operation and that
production targets are met.
2.9
Comply with the highest standard of food storage and food safety.
2.10
Carry out other duties assigned by supervisors and management.
2.11
Keep work area ad utensils clan at all times.

HOURS OF WORK:
48 hours weekly.
5:30 a.m.-2:00 p.m., 6:30 a.m.-1:30 p.m., 6:30 a.m.-6:30 p.m., 10:00 a.m.-6:30 p.m.

REQUIREMENTS:
4.1
Qualifications or Relevant Experience:
Accredited diploma in Diet Cookery would be desired.
4.2
4.3
Personal Qualities:
4.2.1
Know standardized recipe concepts.
4.2.2
Extensive knowledge of therapeutic and special diet preparation.
4.2.3
Be able to work safely with a strong knowledge of accident prevention
techniques.
4.2.4
Be able to work under pressure, doing multiple tasks meeting
production targets and deadline.
4.2.5
Extensive knowledge of hygiene and sanitation standards.
4.2.6
Extensive knowledge of special, modified and therapeutic diets.
4.2.7
Knowledge of imperial and metric weights.
Experience:
4.3.1
Minimum of 3 years experience as a Diet Cook in a hospital.
4.3.2
Command of written and spoken English
