that are fully booked are not shown & additional dates for regular classes may be available on our website. All adult hands

Italian Christmas Feast with Valentina Harris
Christmas day for the Italians is the highlight of the gastronomic year - a day focused on family and good food, with many
different regional menus across the peninsula. Valentina is a much loved and noted authority on Italian food and has written
over 20 books on Italian cookery including the award winning Perfect Pasta. Saturday 22 November 10am £165
Festive French Cooking with Alex Mackay
Join us for this wonderful hands on class with Alex Mackay. From classic bistro dishes to hearty country cooking, Alex picks his
favourite regional recipes to showcase the best of classic French cuisine.
Alex Mackay has worked for Raymond Blanc running his cookery school at Le Manoir aux Quat Saisons and for Delia Smith
running cookery workshops at Norwich City Football Club. His book “Cooking in Provence” won The Guild of Food Writers
Cookery Journalist of the Year in 2006. He appears regularly on TV and teaches in cookery schools around the UK.

Christmas Treats and Gifts
Learn a host of tricky baking techniques while perfecting gorgeous edible gifts or treats to wow your Christmas guests. From
spiced German biscuits, to fortune cookies, shaped sugar tuiles and chocolate salami, alongside fashionable exotically
flavoured marshmallows, you will make some gorgeous goodies wrapped with ribbon and ready to give as pretty
presents. Tutor, Elaine Noble will also show you how to incorporate them into your Christmas entertaining.

A hands on class which will give your Christmas entertaining oodles of Scandi style. From curing fish to making gorgeous

Classic Christmas Patisserie with Ghalid Assyb
Learn to create classics worthy of the finest French patisserie in this hands on class. In this Christmas themed class Ghalid will
teach you how to perfect a Bellini Gateau including a champagne mousse, Le Normand with a spiced apple compote and
cider mousse and a Chestnut Supreme. Each of these requires you to master techniques that will raise your patisserie skill
levels and you will assemble a creation which tastes as stunning as it looks. Saturday 29 November 10am £165
Great British Cakes
Once you have taken this hands on baking class you will have all the techniques to make Classic British cakes and decorate
them beautifully. First learn a range of different sponges: tricky genoise, a whisked fatless sponge and an almond
sponge. Transforming them into a Battenburg, Fondant Fancies, Swiss Roll will require you to master tricky assembly and
decorating techniques including dipping in fondant, covering with marzipan and using cutters and crimpers with rolled

Macaroons Masterclass with Ghalid Assyb
Master the art of macaroons in this one day hands on class. Elegant macaroons are the height of fashion – and notoriously
tricky to make. Let expert patisserie chef Ghalid Assyb, show you how to make macaroons to rival the chicest of Parisian
creations. Ghalid will teach you the classic flavours and fillings as well as some unique and stunning combinations of his own.

Pasta Making with Valentina Harris
Join us for this hands on pasta making class with Valentina, author of Pasta Galore and a host of other Italian cookery books
and a noted authority on Italian food. In Valentina’s Pasta Class you will learn how to make fresh pasta from scratch in her
own tried and tested way. You will learn the best sauces to accompany your fresh pasta - starting with the most important
sauce of all - basic tomato and garlic from which all other garlic based sauces are born and a host of other delicious sauces
and dressings as well as a filled pasta. Saturday 17 January 10am £165
The Complete Kitchen – 5 day course
An inspirational week developing confidence in the kitchen. Based on Richard’s book, COOK, the course provides a
thorough grounding in all the key kitchen skills as well as passing on a wealth of hints, tips and secrets. We will show you how
to hone your knife skills, learning to joint meat and fillet fish, master the essentials of stocks and sauces, create fabulous pastry,
learn the best way to cook fish and discover how to put it all together and present your food beautifully, creating unlimited
menus for entertaining. Jenny Chandler teaches days 1, 2, 4 and 5, Richard Bertinet teaches day 3, Pastry. Every day is fully
hands on and includes a light lunch with a glass of wine. Participants will take home an apron and a signed copy of

2 Day Foundation Course
2 days of intensive tuition taking essential kitchen skills to the next level. Whether you are a beginner or a confident home
cook, this course will equip you with the skills that professional chefs consider essential and which will make the world of
difference to your cooking. Whether it’s perfecting your dicing and slicing skills, jointing poultry, filleting fish or carving roasts
and wafer thin slices of smoked salmon, Day 1 will not only give you a firm foundation for preparing ingredients but also start
you off with delicious dishes to showcase your skills. Day 2 focuses on taste and flavour. Correct saucing can make or break
a dish. Learn the secrets of tasting as you go, how to season perfectly and how a sauce can transform your food. Then
master eight classic sweet and savoury sauces and understand how to use them to full effect in your cooking.

Knife Skills and Carving
This is knife skills with 'knobs-on'! Not only will Jenny show you how to bone, joint, julienne and dice with the best of them, she
will also show teach you how to get to grips with carving whether it be tricky joints for your Sunday roast, slicing smoked
salmon into perfect wafer thin slices or tackling any other carving duties that you might be asked to preside over. A perfect
present for your home's custodian of the carving knife. Monday 26 January 10am £165
Saucing
Join us for this hands on class with Jenny Chandler that focuses on taste and flavour and will help add a new dimension to
your cooking. Correct saucing can make or break a dish. Learn the secrets of tasting as you go, how to season perfectly and
how a sauce can transform your food. Then master eight classic sweet and savoury sauces and understand how to use
them to full effect in your cooking. This class is suitable for vegetarians but please let us know when booking.

Pastry Masterclass with Richard Bertinet
Following on from the launch of Richard's book on Pastry, join him for this hands on class to learn how to make delicious
pastry - sweet, salted and choux - together with a host of techniques to create stunning savoury tarts and quiches, pretty
sweet tarts and choux buns, not to mention fabulously retro choux swans. This class will ensure you never have a soggy

How to Cook Fish and Seafood
Come and learn all there is to know about fish in this hands on cooking class. We will guide you through the tricky topic of
the sustainability of fish, show you what to look for when buying it, how to prepare it and lots of ideas for recipes with different

Croissant and Viennoiserie Masterclass with Richard Bertinet
Viennoiserie are some of the most satisfying pastires to create at home and Richard will take you through the essential skills to
produce the perfect examples in your own kitchen. Croissant, pain au chocolat and danish pastries are all on the menu as
well as crème pâtissière in this extended masterclass. Thursday 29 January 10am £210
Spring Entertaining

A Michelin Starred Masterclass with Josh Eggleton of The Pony and Trap
We are very excited to welcome local chef Josh Eggleton to the kitchen, hot on the heels of his appearance on BBC Two’s
The Great British Menu, as one of the three chefs representing the South West. The class will include highlights of his D Day
menu and plenty of tips and techniques to help you elevate your food to a Michelin starred standard of excellence.

3 Day Showpiece cakes and decorating Masterclass
These three focused master classes are a fabulous introduction to the art of cake decorating. Included in the price of the 3
days is a set of the key tools: a set of icing bag and nozzles, fondant rolling pin and cake smoother.
The master classes are taught by Elaine Noble. Elaine worked as a Pastry Chef at The Ivy in London and Babington House
before setting up her own business supplying Celebration Cakes, Patisserie and Chocolates as well as teaching specialist
classes in Sugarcraft and Patisserie. Day 1 – Showpiece cakes foundation day – A complete masterclass in the basics of
creating beautiful cakes. The day covers hints and tips on perfecting a failsafe sponge, filling and covering with buttercream
and fondant icing to create a smooth finish and assembling tiers. Day 2 – Piping skills - Using royal icing, you will learn the key
skills, from making a piping bag to mixing royal icing to the perfect consistency and then practising the fundamental piping
techniques starting with lines, dots and borders and moving on to more advanced piping depending on your proficiency essential for creating an elegant finish for your cake. Day 3 – Sugar Decoration - Dive into the world of sugar decoration with
this introduction to a host of ways to finish your cake. Learn how to blend your own modelling paste. From this you can
create bows, flowers and simple models. A wonderful foundation in sugar decoration which will equip you to create a range
of stylish finishes for your cake. All days include a light lunch in the middle of the class and a glass of wine at the end of the
day to celebrate your achievements!

This hands on class takes the best of local, seasonal British produce and gives you the skills to make the most of it, whether it is

pub and two other Gastro pubs in Bath, is renowned for his fresh, modern take on traditional British classics and will inspire you

Four Day Baking, Pastry & Patisserie Course
A fabulous 4 day course covering a host of baking ideas. On the first day, join Richard Bertinet for his signature bread making
class and create a range of breads from two simple doughs. On day 2, Richard will then teach you how to master delicious
pastry both sweet and savoury. On day 3, you will learn how to make croissant, pain au chocolat, and danish pastries in a
wonderful extended masterclass with Richard. On the final day we are joined by Ghalid Assyb, who will introduce you to

One Pot – elegant cooking for easy entertaining
In this fabulous class you will learn how to prepare slow cooked and prepare ahead dishes that involve no last minute fuss so
that you are free to pour the drinks and entertain rather than having a panic in the kitchen. Jenny Chandler will teach you a
range of elegant dishes including an en papillote dish, a duck, orange and pistachio pilaff and mussels with chorizo leeks
and cider, along with serving and seasoning tips and touches that elevate your dishes to dinner party favourites.

Masterchef Masterclass with Shelina Permalloo – Mauritian Cooking
Shelina Permalloo returns to the kitchen for this masterclass celebrating the spicy, vibrant cuisine of Mauritius. Mauritian
cooking is an eclectic fusion of French, Indian, African, British and Chinese influences. From fiery hot curries to French inspired
daubes, Chinese fried noodle dishes to cakes, bread and even afternoon tea from Colonial English times, Mauritian cuisine is

Classic Italian Cooking
In this hands on class, Valentina will show you how to perfect a wonderful menu, suitable for a Valentine's feast! You will be
making some great Italian classics including Rissotto three ways using artichokes, butternut squash and feta and spinach and
walnut, Bocconcini di Sogliola - a light Fish dish from Friuli in the far North East of Italy and a spicy twist on the classic dessert

Breads of The World – Middle East & North Africa with Ghalid Assyb
This hands on class will introduce you to a range of wonderful breads from the Middle East and North Africa where bread is
eaten with every meal. Often unleavened flatbreads are used with dips, to mop up the sauce from stews, wrapped around
a filling or stuffed with meat or cheese. You will make the moroccan flatbread, msemen and a range of wonderful breads
filled with meat, cheese or vegetables including: spinach fatayer, lebanese manakich and borek. Ghalid is an expert on
Middle Eastern food and was one of the original chefs at Ottolenghi. Saturday 21 February, 10am, £165
Patisserie Maison with Richard Bertinet
Following the eagerly awaited publication of his fourth book in August, Patisserie Maison, Richard Bertinet will take you
through some delights from the world of patisserie. Recreate his stunning Charlotte aux Pommes, dodos, baba rum and

Brick Lane – A Bangladeshi Feast
Brick Lane has become a destination food haunt for Londoners keen to taste the authentic, vibrant flavours from this hub of
the Bangladeshi community. In this hands on class, Monisha Bharadwaj will teach you to cook favourites from a Bangladeshi
home using subtle spices and herbs - fresh prawn curry simmered with aromatic spices, lamb rezala, cauliflower with ginger, a
cream-free chicken korma, aubergine curry with fennel and Bengali Dal, all served with perfectly cooked rice.

Desperate Housewives & Hapless Husbands
Cooking for the culinarily challenged! Aimed at those who are a bit clueless in the kitchen this fun class with Jenny Chandler
will teach you enough to make simple family suppers without resorting to ready meals or the freezer section at the
supermarket. We will show you how to roast the perfect chicken with 5 different twists to this family favourite, how to rustle up
an impressive smoked fish chowder and take the classic and very adaptable bolognese sauce to new levels. There will be

Kerala – A land of Spices
Join us for this hands on cookery class that will take you through a menu from the Southern Indian region of Kerala, the land
of cardamom, ginger, tamarind and peppers. Pickles, vegetable curries, aromatic fish baked in a banana leaf and a
pineapple and coconut pudding. The recipes have been gathered during Jenny Chandler's extensive travels investigating

All of our Kids classes run from either 10.00am to 12.00pm or 2pm to 4pm and are divided into groups by age. Suitable for
ages 8 – 15, please let us know the age of your child(ren) at time of booking.
Kids’ Christmas Gifts
Lemon curd, chocolate ginger crisps, pistacchio and cranberry cookies and double chocolate biscotti, perfect Christmas

Booking & cancellation policy
Any dishes listed in class descriptions are only a guide to course content. Amendments may be made at our discretion. Bookings are made on a first come, first served basis on
receipt of full payment. We regret that no refunds will be given. We strongly advise customers to take out insurance in the event that they are prevented from attending the
class due to illness, adverse weather conditions or other unavoidable circumstances. Amendments to bookings may be made up to 28 days prior to the date of the class. If you
find you are unable to attend a class less than 28 days before the date of the class you are welcome to send someone else in your place. These rules apply equally to gift
voucher bookings. In the unfortunate and unlikely event that a class has to be cancelled we will always try and give you as much notice as we reasonably can and you will be
offered the choice of an alternative class or a full refund. We will not be liable for any other costs or expenses that you may incur.
