Barcelona’s Boquería with Jenny Chandler A class inspired by one of the most famous markets in the World, Seafood is a particular speciality of the Boquería, so the highlight of this class will be preparing a sarsuela seafood operetta accompanied by the Catalan flatbread, coca and griddled vegetables with a romesco sauce. You’ll finish with a classic Braç de Gitano – a delicious roulade filled with crema catalana. Friday 2nd May 10am £165 ONE – a cook & her cupboard with Florence Knight Join Florence on this class based on her new book, One. Florence’s philosophy is that a dish should have one main ingredient with a few supporting flavours. Any more and the dish becomes confused and overly elaborate. This is a wonderful opportunity to draw inspiration from Florence’s imaginative and meticulous approach to food. Including the most important sauce of all – basic tomato and garlic – from which all others are born. Ghalid’s class includes a millefeuille, passionfruit gateau and caramalised pear and chocolate delight. You will master a range of techniques from perfect puff pastry and mousseline cream, to genoise sponge and mousse. Saturday 3 May 10am £165 Kerala – A land of Spices In this class, you will be taken through a menu from the Southern Indian region of Kerala, the land of cardamom, ginger, tamarind and peppers. Pickles, vegetable curries, aromatic fish baked in a banana leaf and a pineapple and coconut pudding. Friday 9 May 10am £165 Stylish Indian Entertaining Indian cuisine is popular the world over and nowadays every self-respecting cook treasures their rows of delicate herbs and exotic spices that contain the secret to their aromatic masala pastes. In this hands on class, Monisha will show you how to cook stylish dishes the authentic way. Saturday 17 May 10am £165 Four day baking, pastry and patisserie course A fabulous four day course covering a host of baking ideas. Day 1 is Richard Bertinets signature bread making class. On day 2, Richard will teach you how to master pastry – both sweet and savoury. Day 3 covers croissant, pain au chocolat and Danish pastries. On day 4, Ghalid Assyb will introduce you to some wonderful patisserie including millefeuille, opera cake and chocolate and vanilla financier. Thursday 12 June 10am £210 Everybody Everyday with Alex Mackay Alex’s new book, Everybody Everyday, is aimed at inspiring all of us in the kitchen by mastering a few basic recipes and constantly reinventing them so that they never grow tired. Friday 20 June 10am £165 Classic Italian Cooking – Tuscany and Umbria with Valentina Harris Valentina Harris will show you a wonderful feast of Italian dishes from this region of Italy. She appears regularly on television and has had her own series on BBC called Italian Regional Cookery. Saturday 12 July 2014 £165 Sear Sizzle & Smoke! Start with some butchery to get your cuts ready to cook, then move on to rubs and marinades to add flavour and spice. Finally we turn our attention to smoking and other methods to give you perfect results everytime, whether cooking indoors or out. Whether you are new to bread making, new to his techniques or even if you have been working from the books for some time there is plenty to learn. Lots of individual attention and all of it good fun! By the end of the day you will have created fougasse, bread sticks, focaccia, tin loaves and prepared a flamiche for lunch. On day 2 you will take everything you have learned on day one, and start to master the very tricky techniques of moulding and strengthening the dough. This takes practice and is something Richard regularly reinforces with our own team of bakers. You will also start to learn how to use a lame correctly and how to bake with steam. Saturday 19 July 10am £400 Five Day Patisserie Masterclass with Yolande Stanley A series of five focused masterclasses to build your skill levels and which will leave you confident to produce beautifully presented set piece desserts or gateaux. Day 1 - Sugar. Learn how to work with sugar in a variety of ways including producing a sugar-based sweetmeat. Day 2 - Chocolate. Learn how to work with chocolate to make moulded chocolates with a ganache filling. The class covers tempering couverture, techniques for coating the moulds and producing cut-out pieces/moulded pieces. Day 3 - Petits Fours. Yolande will show you how to create a range a beautiful and impressive petits fours. Day 4 - Plated Desserts. Bringing together many of the skills learnt in the first classes, Yolande will help you to create a beautiful plated dessert using a range of techniques, such as a hot souffle, an ice, a fruit compote/beignet and coulis. Day 5 - Entremet. Learn how to prepare a chocolate entremet (or layered gateaux) including various layers of inserts: a chocolate mousse, a jelly and brulee, a biscuit or sponge layer topped with a glossy glaze and fine decoration. Friday 5 September 10am £210 A Weekend of Italian Feasting with Valentina Harris Indulge in two days of hands on cooking with noted authority on Italian Food, Valentina Harris. Day 1 will focus on making fresh pasta and you will start to put together the elements of a spectacular Timballo di Pasta (pasta pie). There will still be time to create a range of classic Italian dishes to enjoy for lunch on the first day with a glass of wine. Day 2 will be spent assembling your Timballo di Pasta, which will be the centerpiece of your Italian feast. While it bakes you will make a range of classic antipasti and dolci to accompany it. Lunch on Day 2 will be a suitably festive celebration of all you have learned over the weekend.
