Welcome to our seventh AFTER DARK at ALL SAINTS program!
What started out as simply a way to beat the winter blues and have some fun has grown into a much
anticipated tradition on the Outer Banks! Still a bright spot in the middle of a dreary winter, it’s a
wonderful way to explore new and old interests in a relaxed and friendly atmosphere. We are excited to
again offer classes on a wide variety of fascinating topics, open to everyone in our community. The dates
for this event have been set for February and the schedule works around our Church’s preparation for
and participation in Lent.
For the seventh consecutive year, we have invited church members, friends and neighbors throughout
our area to share their talents and passions by offering courses and workshops to people of all ages. In
this catalog you will find some remarkable opportunities taught by fascinating and richly experienced
individuals. All the net proceeds from this program will be used by All Saints Church to give back to our
community through our outreach programs. Through the participation of students and teachers over
the six previous programs, we have had 3,533 class registrations and have given back $60,990 to
agencies and organizations serving our community!
The program this year will again support local organizations helping many of our friends and neighbors
in need on the Outer Banks. Last year, After Dark generated $14,440, which was given to support five
agencies: Interfaith Community Outreach, Food For Thought, Community Care Clinic, Beach Food
Pantry, and Room in the Inn. We hope through this year’s program to be able to give back even more.

REGISTRATION PROCEDURES
COST
Each class registration costs $20 per student. For young people under 18, the cost is $10 per student.
Some classes may have additional, per-student fees to cover necessary supplies. All class details are in
this catalog. No refunds will be offered unless the class is canceled by the instructor.
GENERAL
The Registration Form is found near the end of this catalog. For all registrations, payment by cash or
check is required to secure your registration. Unfortunately, we cannot accept credit cards. Due to the
volume of registrants anticipated on the first day of registration, each individual is asked to register for
no more than 4 people. Multiple registrations slow the process for those waiting.
IN PERSON Registration
Registration begins at All Saints Church on Saturday, January 2, from 9 AM to 12 Noon, and will take
place in a designated space in the Education Wing. We are unable to accept registrations prior to that
date and time. In-person registration is also available beginning at 8 AM on Monday, Jan. 4.
TELEPHONE Registration
Telephone registrations will be accepted beginning at 12 Noon to 3 PM on Saturday, January 2. Phone
messages left prior to that date and time will be handled at the end of the day, time permitting. While
telephone registrations are accepted, payment MUST be received within 48 hours or registration will be
cancelled. Registration by phone is also available beginning at 8 AM on Monday, Jan. 4.
MAIL Registration
We will accept registration forms and checks mailed to the church beginning Monday, January 4. You
are encouraged to call the office before mailing to ensure that your chosen classes are available.
Registration forms received by mail on or before the first day of registration will be recorded at the end
of the day on Monday, Jan. 4.
EMAIL Registration
Emailed registrations are accepted beginning Monday, January 4, but payment must be received within
48 hours or the registration will be cancelled.

COOKING
Class 700 – ROADSIDE RECIPE REVEAL (CLOSED)
ASHLEY COPELAND has owned the Roadside Bar and Grill since it opened in 1995. Located in the oldest
house in Duck, the restaurant has been serving great southern food and offering good times for
vacationers and locals for two decades. In past years, Ashley and Head Chef JOE LEBLANC have offered
students their secrets for Roadside’s famous Clam Chowder and their great Shrimp and Grits. Join this
class to see what the dynamic duo will cook up this year. You won’t be disappointed – guaranteed!
Class size will be limited to 15 with an additional fee of $10 for supplies. Monday, Feb 15
Class 701 – RISOTTO BY METROPOLIS
If you were lucky enough last year to taste their Cream of Asparagus Soup, then you’ll want to return
and enjoy Metropolis’ Risotto ala Milanese. Join MARK ANTHONY, Executive Chef, and ANN RUNNELS,
Sous Chef, on their second adventure with After Dark. Ann previously owned the Osprey Gourmet in
Duck and Miriam's Restaurant in Corolla. Mark previously owned Nicoletta's Italian Restaurant in Corolla
and has now been co-owner and executive chef of Metropolis for the last 8 years. The class will teach
the home cook how to create a restaurant quality risotto to please any palate. Space is limited to 20
students and there is an additional fee of $10 for supplies. Rescheduled: from Monday, Feb 1 to

Class 702 – HEALTHY GOURMET (COMPLETED)
WES STEPP, owner and Executive Chef of the Red Sky restaurant in Duck for over 15 years, believes
gourmet food can be not only delicious, but healthy as well! What began for him as a childhood passion
for cooking has evolved into a love affair with food. Join Chef Wes for a special evening and learn from
this experienced Outer Banks chef and restaurateur how to create gourmet food in a healthy style.
Space is limited to 20 participants and there is an additional fee of $10 for supplies. Tuesday, Feb 2
Class 703 – TIKKA MASALA
You might be greeted with “mingalaba” or “neh kaun la” when you enter Corolla’s Buddha’Licious
Restaurant. TODD BRYANT, Owner/Chef of this popular place, will prepare an upscale version of
traditional Tikka Masala with sides. This aromatic and flavorful curry-based dish, popular in Britain, may
have originated in Punjab and Uttar Pradesh during the past 50 years. Last year Chef Todd, who has over
20 years of experience in restaurants and an International Studies degree from UNC, prepared a
Burmese jungle curry. He has also been with Chili Peppers, Outer Banks Brewing Station, and Ocean
Boulevard restaurants. Space is limited to 20 students and there is an additional fee of $10 for supplies.

Class 704 – SALT BOX CAFÉ (CANCELLED)
Salt Box Café Chef/Owners AMANDA and RANDOLPH SPRINKLE have over 35 years of experience on the
restaurant scene, six of which have been on the OBX. They opened this popular restaurant on Colington
Road almost two years ago. Their background includes the prestigious Culinary Institute of America in
Hyde Park, NY, and restaurant experience in New Orleans, Pittsburgh, and South America. Join them as
they draw on this broad experience and offer a marvelous evening preparing contemporary fresh and
innovative dishes. Class size is limited to 20 participants. Monday, Feb 22
Class 705 – MEXICAN CHILE CON CARNE
Oaxaca has long been considered "Mexico's culinary capital." The most notable aspect of Oaxacan
cuisine is its variety of complex chile sauces. JOHN MARMANN, the Owner/Chef of Agave Roja, promises
students in this class an exceptional meal of slow roasted Chile Con Carne, full of rich flavors, in a
tomatillo-chile sauce. This dish has a variety of uses in many traditional Mexican meals. Chef John has
over 20 years of experience in a wide variety of locales, including St John’s USVI, Scottsdale, AZ, and
New York City. Class size is limited to 20 students and there is an additional fee of $10 for supplies.

Class 706 – MOUSSAKA (μουσακάς) – Saturday Morning Class (CLOSED)
Last year this former restaurateur, grandmother, and mother of two Outer Banks restaurant owners
taught the preparation of traditional Baklava to participants in her class. Students were treated to a rich
experience and mouthwatering baking results! Now “KIKI” KIOUSIS is back for a Saturday morning class
preparing Moussaka, a classic Greek dish made traditionally with aubergine, meat, tomatoes and spices.
You will enjoy this delicious dish almost as much as the charm Kiki brings to the kitchen. After the
cooking? Lunch! Class size is limited to 15 students and there is an additional fee of $10 for supplies.

Class 707 – THE MANY THINGS WE CAN DO WITH OYSTERS
Here’s your chance to enjoy a wonderful evening in the kitchen with SCOTT FOSTER, Executive Chef and
co-owner of Coastal Provisions in Southern Shores, as well as Coastal Cravings and Coastal Cantina in
Duck. Scott and his partner, Dan Lewis, have been featured on Food TV’s “Diners, Drive Ins & Dives.”
Students will get this Johnson & Wales Culinary Arts graduate’s approach to selecting, serving, and
preparing the many types of oysters available to us in this area. Come hungry! Class size is limited to 20
students with an additional fee of $10 for supplies. Tuesday, Feb 23
Class 708 – AWESOME DESSERTS IN A PINCH
Sometimes we find ourselves pinched for time, yet in need of a quick and special dessert. Join Pastry
Chef ANGEL DOEBLER for a great class learning to create a couple of quick and professional quality
desserts, as well as plating techniques to make a super presentation. Chef Angel has a long history of
restaurant work from the back to the front of the house, and has been a pastry chef for over seven
years, recently at Ocean Boulevard in Kitty Hawk. While exploring desserts with Angel, you’ll enjoy a
glass of wine or a special balsamic “mocktail.” Class size is limited to 12 students and there is an
additional fee of $15 for supplies. Monday, Feb 8
Class 709 –BAJA GRILL DOES VERACRUZ (CLOSED) (COMPLETED)
Enjoy the kitchen creativity of Executive Chef MATT PAYNE as he prepares food in the classic style of the
Baja Grill. A graduate of the Culinary Institute of America, Matt has been cooking professionally for over
18 years and has been honored with Best in Show, Chef’s Choice award at Taste of the Beach. For this
evening, students will enjoy a taste of the Veracruz region of Mexico – seafood with Spanish influences
done in the Baja Grill Way. Not only will you learn how to prepare food with bold flavors, but you’ll also
pick up some restaurant tricks to make your cooking even more fun! Space is limited to 20 participants
and there is an additional fee of $5 for supplies. Thursday, Feb 4
Class 710 – A TASTE OF ASIA (CLOSED)
CAROLE and GARY KIMMEL return to After Dark to share their extensive experience with Asian cuisine.
For over 40 years, they have explored the different food styles and ingredients of Asia, from China,
Thailand, Japan, Korea, Malaysia and India. They love experimenting at home, have given special
dinners to small groups, and have taught classes for many years. Most recently, they taught at
Stonewall Kitchens in Maine, where they will be returning in the summer of 2016. This class will include
demonstrations of several dishes, including entrees and dessert. Since some dishes will include
ingredients that can be allergens (e.g., peanuts, garlic), each participant will need to determine if that
presents a problem for them. The class is open to any skill level, including beginners. You will even get a
chance to practice your skill with chop sticks! Class size is limited to 15 participants and there is an
additional fee of $15 for supplies. Note: This class begins at 6 PM on Friday, March 4
Class 711 – AN ITALIAN FAMILY DINNER (CLOSED) (COMPLETED)
RICHARD BRUCE, co-owner of Pigman’s Bar-B-Que in Kill Devil Hills, is a long time supporter of nonprofits on the Outer Banks and currently serves as President of the Beach Food Pantry. While you might
expect that his first offering of an After Dark cooking class would parallel his restaurant’s identity, you
are in for a surprise! He states that “To say that food is love would be an understatement. So why don’t
we all go make love in the kitchen!” Mamma mia - you will love the experience and the flavors! Space is
limited to 20 students. Wednesday, Feb 3
Class 712 – OBX COOKING (CLOSED)
Chef MICHAEL BLANCHARD graduated from Johnson and Wales University in 2011 with a degree in
Culinary Arts. He then moved to Greenville and helped opened The Scullery as Kitchen Manager. Since
2013 he has lived and worked on the Outer Banks, first as a Line Chef at The Blue Point and now as Head
Chef at Steamers Restaurant, which recently closed in Corolla and will open in Southern Shores during
early 2016. For his first foray into After Dark, Michael will demonstrate his take on a classic Outer Banks
clam dish, talk about different ways to work with traditional Outer Banks ingredients and seafood, and
discuss the history of Outer Banks cooking. Wine will be offered at the class. Class size is limited to 20
students and there is an additional fee of $15 for supplies. Tuesday, Feb 16
Class 713 – THE ART OF PATE’ CHOUX (CLOSED)
Using simple ingredients and her magical talents, this gifted baker will teach how to make cream puffs,
éclairs and profiteroles from Pate’ A Choux. ETTA LANUTI is an experienced cook at Coastal Provisions,
where she turns out rolls, breads, desserts, pastries, and all manner of other goodies. (You should try
her bread pudding!) She studied at the Peter Kumf School in NYC before relocating to the Outer Banks.
For this class, she even promises to reveal her “special secret” that makes it all as easy as a cream puff!

Class 714 – PACIFIC PARADISE (CLOSED)
JEFF and CRAIG READMAN, owners and chefs at the recently opened Eastside Restaurant at
Scarborough Lane in Duck, welcome you to a Pacific Rim cuisine themed feast. The brothers will focus
on fresh, regional ingredients and put a West Coast/Asian spin on them. New to the OBX restaurant
scene, they bring along plenty of knowledge and experience from their time spent in Hawaii and on the
West Coast. Sign up for a delicious taste of their flavorful fusion, unique to the Eastside palate. Class size
is limited to 20 students and there is an additional fee of $10 for supplies. Friday, Feb 26
ARTS, FLOWERS, CRAFTS & HOBBIES
Class 720 (COMPLETED) & Class 721 – SURF FISHING – Two Separate Classes
Anyone living on the Outer Banks knows this is a surf fishing Mecca! The “from-heres” and the “comeheres” know what fun surf fishing can be along our coast. Even if you’ve attended this class before or
you are an experienced surf reader and fisherman, you will learn something new from STU BALDWIN,
Past President of the OBX Anglers Club, who will share his experience and know-how. There are two
classes to choose from. Surf Fishing 1 (#720) is made easy for the family and will cover equipment, knot
tying, and how to read a beach. Surf Fishing 2 (#721) is for the advanced angler and will cover specific
instructions for knot tying, cast net and Bluefish, Speckled Trout, Flounder, and Red Drum. Class 720 –

Class 722 – MINDFUL NATURE PHOTOGRAPHY
Mindful Nature Photography blends creative inspiration, sensitivity to the gifts in the moment, a sense
of connection to wildlife and wild-lands, and appropriate technique. Whether you are a beginning digital
photographer with a "point and shoot" camera or a more experienced one with advanced gear, learn
how award-winning local nature photographer and owner of Yellow House Gallery EVE TUREK
approaches her art and pick up tips to use for your own photos. Non-photographers who would simply
enjoy hearing the stories behind Eve's award-winning images are welcome, too. Monday, Feb 8
Class 723– ART JOURNALING ON CANVAS
Join DONNA HOLLOWELL, artist, teacher, and owner of Déjà New in Kitty Hawk, to explore the “inner
you” by way of expressive art journaling, a combination of the written word and creative expression.
Donna will guide you through an enjoyable evening expressing your unique creativity on an 8x10 canvas.
Materials are supplied. Donna is a returning artist from prior After Dark programs, where she led other
self-expressive art courses. There is an additional $5 fee for supplies. Monday, Feb 15
Class 724 – PAINTING THE FACE OF JESUS – Two Successive Nights
JIM BICKFORD is a man of many talents who has taught portrait painting and various cooking classes in
prior After Dark programs. This real estate developer from Norfolk is offering a two evening adventure
to paint the face of Christ based on a popular Byzantine icon – not as an icon, but as a prayer facilitator.
Students will focus on creating their own painted face of Christ. The class is offered for beginners –
painters and saints – with no experience necessary. Jim is a graduate of the Shalem Institute for Spiritual
Formation in Washington DC, and a Franciscan Associate with the Society of St. Francis. Students taking
this class would enjoy the Icon Exhibit “Saints and Dragons” on display at Norfolk’s Chrysler Museum
through Jan 10 – see it if you can! Thursday, Feb 25 and Friday, Feb 26
Class 725– ADULT COLORING
Has your soul always wanted to be more creative, but you don't know where to begin? Come enjoy the
latest craze - adult coloring! You don’t need art experience to benefit from this simple, meditative and
stress-busting activity. Instructors MARGARET WELCH and KAREN BACHMAN have both lived on the
Outer Banks since the mid-80’s and are art and yoga enthusiasts. They have found coloring to be a great
way to relax and stay centered. Why should kids have all the fun? A book and colored pencils will be
provided. Class size is limited to 15 students and there is an additional fee of $8 for supplies. Thursday,

Class 726 – KEEP WARM AND KNIT (COMPLETED)
FRANCES SMYTH and MARTHA BLOUNT SIMPSON, members of St Andrew’s Episcopal Church in
Columbia, are life-long knitters who lead Columbia’s “Knit Night Nuts.” They have offered knitting
courses at After Dark for three years. Class participants will work on a small project – a mug warmer –
that can be as easy or complex as desired. Knitters of all skill levels are invited to learn basics and
practice cables, color design, and button attachments. Students are asked to bring a pair of knitting
needles and a ball of yarn (any size is fine). Class size is limited to 10 students. Wednesday, Feb 3rd
Class 727 - HAIKU POETRY WRITING
KAYE WHITE first studied poetry writing in 2000 with Macrina Widerkehr at Bon Secours Spiritual Center
in Maryland, and has been composing poetry ever since. In fact, on Kaye’s first day of writing, she
ended up with 25 poems! In this class she will share her insights on the subject, with a focus on Haiku.
This Japanese form of poetry has specific characteristics: it presents a picture of nature or other themes
and has three lines and 17 syllables – five in the first line, seven in the second, and five in the third. Kaye
thinks of Haiku writing as “framing your memories,” especially helpful when you have no camera with
you. No experience is needed to benefit from this class – you will go home with poetry YOU created!
Students are asked to bring a notebook or journal. Class size is limited to 15 students. Monday, Feb 22
Class 728 – DYEING WITH PLANTS
People have been dyeing with plants over many centuries. The brilliant colors that can be coaxed from
plant materials are quite interesting. For this After Dark first, enjoy a fascinating evening with MARY
KEITH LILLY, a weaver and dyer since the 1970’s. Keith has demonstrated Natural Dyeing at various
events, including the Waterford (VA) Fair and Shenandoah Valley Fiber Festival. Over the years, she has
given this presentation to garden clubs, Master Gardeners, and the DAR. Now living in Southern Shores,
she is a member of the Outer Banks Fiber Guild and a Dare County Master Gardener. Students will learn
history and types of local plants that yield colors, plus receive a handout on resources. Friday, Feb 5
Class 729 – STAINED GLASS – Two Successive Nights (CLOSED) (COMPLETED)
SANDY BRIGGMAN started her adventure in the art of Stained Glass in 1998 and was taught by local
artists Ellinor and Bob Nick in Wanchese. She has created numerous pieces that you can find all around
the Outer Banks, even overseas! Sandy’s love of stained glass led to her teaching the craft for the past
ten years in Wanchese, and now at All Saints. In this class, students will learn the “foil” method, working
with glass, grinders, foil, and solder to create a stained glass sun catcher to take home after the twonight course. The class is limited to 6 students, beginning each of the two nights at 6 PM and lasting
for three hours. There is an additional fee of $15 for supplies. Wednesday, Feb 3 and Thursday, Feb 4
Class 730–THE ART OF MEDITATIVE DOODLING (COMPLETED)
Last year, Michigan watercolorist MERIKAY WINTER taught her first After Dark class on Zentangle. Now
she will guide students, using pen and paper, through a process of repetitive designs to produce a
unique piece of art. Doodling is a key feature of her creative art process, which is based on meditative
thinking and reflecting. Meditating permits the mind to explore one’s creative side in a peaceful and
non-threatening way. The possibilities are endless and, best of all, there is no such thing as a mistake!
You will go home with a greeting card or art piece suitable for framing. Class size is limited to 20
students and there is an additional fee of $3 for supplies. Wednesday, Feb 3
Class 731 – BIRD HOUSE GOURDS – Two Successive Nights (CLOSED)
For her second offering at her first After Dark, MARY KEITH LILLY, a Master Gardener and avid bird
watcher, will teach students how to transform gourds into birdhouses. In this fun, hands-on class, you
will paint or stain and decorate a bird house gourd grown locally in NC, then take the finished product
home to attract birds to your garden in spring. Also included in the class is information on growing
gourds and attracting beneficial wildlife to your garden. A birdhouse gourd and finishing materials will
be provided to each participant. Class size is limited to 10 students and there is an additional fee of $10

Class 732 – PAINTING: “WINTER WOODS”
MEGHAN SADLER is a professional artist and licensed art teacher with a master's degree in Art
Education from VCU's School of the Arts. In 2014 Meghan founded Local Color, an art studio in Corolla
where she displays her work and holds painting classes for adults and children. Join this talented artist
and teacher for her second After Dark offering. In last year’s classes, Meghan guided students in
creating their own interpretations of two paintings, “Winter Cardinals” and Van Gogh’s “Starry Nights.”
This year, students will explore “Winter Woods” and create their own 8x10 acrylic painting on canvas.
The class is limited to 20 students and there is an additional fee of $8 for supplies. Rescheduled: from

Class 733 – IDENTIFYING ART
Have you ever bought art at an estate sale, yard sale, or auction, or inherited a work of art, and
wondered what its story and true value were? Now you don’t have to attend NPR’s Antiques Road
Show to get answers! Join MELANIE SMITH, owner of our local Seaside Art Gallery and an accredited art
appraiser, for this opportunity to learn how to recognize the differences in art media and to
differentiate between real and fake art. Students are welcome to bring a piece of art to class for help
with identifying it. Class size is limited to 12 students. Thursday, Feb 25
Class 734 – DISCOVER YOUR FLOWER ARRANGING SKILLS (CLOSED)
Here’s a great way to bring a smile to your face and brighten up any room. Learn the basics of easy
fresh flower arrangements, including the selection of containers, flowers and foliage. LILIAS
MORRISON, Adventurer, has been a long time flower observer and arranger in the UK, Africa, and
America. She is presently a member of the Flower Guild at All Saints. This is an ideal course for
beginners or anyone wanting a fresh look at flowers! Students will learn the basics of form, color, and
texture as well as the mechanics of containers and supporting materials. Course size is limited to 12
participants. There is an additional fee of $5 for flowers and supplies. Monday, Feb 15
Class 735 – BASIC JEWELRY MAKING TECHNIQUES
GINNY FLOWERS has spread the joys of beading art and jewelry through her Nags Head business, Cloud
Nine, for over 27 years. She teaches the art of jewelry making at COA through the continuing education
program and is president of the Dare County Arts Council. Spend an evening with Ginny learning basic
jewelry making techniques, as well as how to repurpose jewelry you may already have at home. The
extra fee for supplies will include jewelry kit wire and beads. Students will take home their own custom
made bracelet, earrings, or necklace! Class size is limited to 12 participants and there is an additional
fee of $20 for supplies. Tuesday, Feb 23
HEALTH & WELL BEING
Class 740 – PLANNING FOR END-OF-LIFE CARE – Two Nights (Feb 2nd COMPLETED)
Healthcare is rapidly evolving towards a quality focused approach, with the goal of better aligning care
with the values and preferences of each individual. About 85% of people indicate they want to die at
home surrounded by family, but in reality only 17% are able to do so. In order to close this gap, we need
to understand what matters most to each person, then make their preferences known and readily
available. This course will provide information on options for care at the end of life, with North
Carolina’s statutory requirements on the first night and how to complete your own Health Care Power
of Attorney and Living Will on the second. The presenting panel of experts is facilitated by ELLIE WARD,
Nursing Director of Dare County Public Health and Hospice for nearly 20 years, now working with Vidant
Health to promote advance care planning across their 29 county service area in eastern NC. The other
panelists are JEAN-LOUISE DIXON, Elderlaw and Estate Planning Attorney, and ROISIN McKEITHAN, MD,
family practice physician. Class size is limited to 30 participants. Tuesday, Feb 2 and Thursday, Feb 18
Class 741 – CREATING VIBRANT LIVES FOR FRIENDS WITH DEMENTIA
Participants in this class will learn from DVD and discussion about the work of Dr. John Zeisel, an
innovator in non-pharmacological approaches to treating Alzheimer’s Disease. His work shows that
caregivers can have meaningful relationships with friends who have the disease. The course will offer

Reflexology is not just a foot rub, but the methodical application of pressure to points on the soles of the
feet that correspond to areas of human anatomy. This session is designed for couples or friends who

initial relaxation techniques, the basics of “thumb walking” pressure, and how to provide a brief foot

currently the Program Director for the station. His course will be an entertaining and accessible
overview of classical music. He will feature examples of popular music that originated as classical

Class 754 – 140 YEARS OF LIGHT: CURRITUCK BEACH LIGHTHOUSE
The Currituck Beach Lighthouse was the last of the great brick lighthouses built on the North Carolina
coast. First illuminated on December 1, 1875, its 140 years of almost uninterrupted light were
celebrated on Dec 1, 2015. MEGHAN AGRESTO has worked at the Lighthouse for almost 11 of those
years; her bachelor’s in Classics and graduate degree in Social Work, concentrating in non-profit
management, have proven to be a great combination for a historic site run by a volunteer board. She
has done extensive research on the facility, which has a First Order Fresnel lens and is full of rich history,
interesting engineering, and fascinating lore. It is now home to two year-round lighthouse keepers and

Class 755 – COMPUTER SAVVY FOR BEGINNERS AND INTERMEDIATES (COMPLETED)
Nowadays, everyone needs a computer and most people have one. The problem is that not everyone
knows what to do with the computer once they have it. This class will give participants an opportunity
to learn from two experts, DAVID MAIN, Director of Information Systems at Saint Patrick Catholic School
in Norfolk, VA, and his brother BRIAN MAIN, Database Analyst and IT Consultant at Eastern Virginia
Medical School. They will address those nagging issues such as how do I keep from getting a virus, how
can I send a picture to my son overseas, or why do I get so much junk email. The class will be custom
tailored to the students attending, so bring your own questions and concerns! Students will receive a
handout and disc of utilities and free programs to help keep their computers safe and more productive.

Class 756 – RIP CURRENTS: MYTHS, FACTS, AND ROOM FOR IMPROVEMENT
This subject should always be in the consciousness of OBXers and all others who enjoy our beaches.
Certainly rip currents can be dangerous; as with other fear-provoking issues, however, knowledge is
power. This presentation by JESSE McNINCH, PhD, will provide a scientist’s assessment of available data
and information on rip currents, including recent research done by the U.S. Army Corps of Engineers,
Coastal and Hydraulics Laboratory. Dr. McNinch is Director of the Field Research Facility located in Duck
and has degrees in Marine Science from the University of Southwestern Louisiana and the University of
North Carolina. His research couples geology and hydrodynamics. You will be fascinated by his energy

Local dog trainer ELLEN CAREY, owner of Greater Coastal K9 Academy in Powell’s Point, has over 20
years of experience training dogs and believes that 99% of what some call “bad behavior” in a dog is a
trait that humans have put there! This is a terrific opportunity for you and your best furry friend to start
a new and more satisfying relationship. You will learn how to better understand your pet, as well as

Class 759 – HAND AND FOOT CARD GAME
Hand and Foot is a Canasta-type card game played by four people – two sets of partners. Players are
dealt two stacks of cards ("the Hand" and "the Foot"). The "Hand" must be played before the "Foot" is
used. The object is to get the most points by making canastas and using all the cards in one's hand and
foot. Play continues up to a score of 10,000 points, with the meld increasing with each round. "Hand
and Foot" can be enjoyed by everyone from teen through adult. You’ll see how playing cards, a few
friends, and maybe a glass of wine can be the mix for a great evening – and you'll be hooked! Join SALLY

Agriculture has long been a top industry in North Carolina, but until recently our state had seen a steady

soft, creamy Brie-style cheeses, to robust washed rinds, to savory-sweet blues, NC cheese makers are
producing world class cheeses with global influence. Join this class to taste some favorites and learn

been selling and promoting wine for over 20 years in the restaurant business. John will share his

Class 765 – NAVIGATING FACEBOOK, TWITTER, & SOCIAL MEDIA – JUST BEYOND THE BASICS

This course will provide relatively new social media users greater insight into how to use Facebook,
Twitter and Instagram to stay connected and engaged with family and friends. The course may be
adjusted based on the interests and level of experience of the group, as gauged by participant response

Terrorism, war, hatred and violence continue unabated in the news of the world. From the Mideast to
Paris, to Asia and Africa, to our own land, there are repeating images of armed people full of apparent
hatred. Spend a fascinating evening examining the question, “Why do they hate us?” through historical
and theological analyses. The class will be led by IGNACIO GÖTZ, BA, MA, BD, PhD, Laurence Stessin
Distinguished Professor Emeritus and Teaching Fellow at New College, Hofstra University. Dr. Götz has

Class 767 – DANCE THE “TEXAS TWO-STEP”
The Texas Two-Step, a dance with historical roots in European and Mexican dance, appeared in
Germany and Hungary in the 1800s. Similar steps danced at Mexican fandangos were also an influence.
Members of this fun class will learn to do a basic two-step and some advanced steps, as well as Country
and Western dance floor etiquette. Couples and singles are invited to join long-time Two-Steppers
MURRAY and CHRIS ROSS and learn various dance positions, including an open position with the lead's
right hand on the follower's left shoulder; a closed position with no space between the partners; and a
closed overhand position in which the lead wraps the left forearm over the follower's right forearm and

CRAIG PEEL is a retired clergyperson in the Presbyterian Church (USA) who, for over a decade, has
operated a small home repair business with his son-in-law. They have completed both minor and
extensive, internal and external home repairs on the Outer Banks. Our homes are not only critically
important investments, but also sources of comfort and peace in our lives. Participants in this workshop
will find hands-on help to develop skills needed for routine maintenance tasks, and acquire an eye for
potential problem areas. Topics will include vacation preparation; care of floors; heating and cooling;
kitchen, bathrooms, and laundry rooms; interior and exterior walls; roofing; and yard maintenance.

night will focus on understanding one’s own thinking on a subject: thinking about our thinking. Night

Class 773 – FIRE SAFETY IN THE HOME
PERRY WHITE has been in the Fire and Rescue Service since 1961, when he started with the Wheaton
Volunteer Rescue Squad. Now with Nags Head Fire and Rescue, his training includes EMS (highest
Paramedic 1977-1997), firefighting, and heavy rescue. Owners and renters alike will benefit from his
experience. Perry will offer information on prevention of home fires and then, in the event a fire does

decade; why was it acceptable in the Roaring Twenties? Zelda Fitzgerald and Alice Roosevelt led the
way! Join DR. LIN LOGAN, who received her PhD in Education and History from the University of Hawaii,
for a fun night learning about a transitional time for American women. Lin is a retired professor of US
History and Women’s History at Virginia Wesleyan University. She also did post-doctoral research at
William and Mary. You will enjoy this look back – and maybe even get an understanding of things to

Every home project starts with an idea; this class will give participants an overview of taking their ideas
to the next step and beyond. An Outer Banks resident since 1991, JOE ALBANESE has been in the
construction industry for over 30 years. Joe has a Bachelors Degree in Industrial Engineering and
Masters Degree in Education. He has taught Industrial Technology in high school and middle school, as
well as Building Trade Courses at College of the Albemarle. Students in this course will begin to
understand the contractor selection process, permit requirements and costs, architect and engineering
involvement, and other steps necessary to obtain a certificate of completion. Cost cutting methods will
be discussed regarding things homeowners can do on their own – before, during, and after construction.
