“Waters of the World”
Introduction
Water is essential to life. Are all waters the same?
Jeremie Heng, Food & Beverage Director and Sommelier Paulina
Avendano invite you to enjoy our selection of waters sourced
from various regions of the world.
“Water is sometimes sharp and sometimes strong, sometimes
acidic and sometimes bitter, sometimes sweet and sometimes
thick or thin, sometimes it is seen bringing hurt or pestilence,
sometimes health giving, sometimes poisonous. It suffers change
into as many matures as are the different places through which it
passes”
-Leonardo Da Vinci

FIJI
Fiji Water begins as rain falling on the tropical island of Viti Levu’s
north coast and is drawn from an artesian aquifer that lies
hundreds of feet below the edges of a primitive rainforest. As it
filters down through layer after layer of ancient volcanic rock, the
natural filtration process introduces the mineral silica which
contributes to Fiji Water’s distinctly soft and smooth. That distance
and isolation is part of what makes Fiji water so pure and rich in
taste.

Magnesium 15 mg
Calcium 18 mg

BADOIT
Badoit is naturally carbonated with tiny bubbles, the type found in
fine Champagne that gives this water a light and sophisticated
taste despite the TDS (Total Dissolved Solid) content. The water
rises through granite from thermal spring in Saint Galmier, a town
in Loire region of France. It pairs well with sweet wine and cheese.
Type: Sparkling
Content: Sodium 165 mg
Magnesium 85 mg
Calcium 190 mg
Size: 0.75 liter
EVIAN
Evian begins as rain which filters down through sandstone and
gravel in the French Alps. It takes 15 years for the water to pass
through the mountain before rising to the spring. Along the way it
picks up calcium and magnesium producing a slightly bitter,
unique acquired taste.
Type: Still
Content: Sodium 6.5 mg
Magnesium 26 mg
Calcium 80 mg

PERRIER
Over 120 million years ago, on the Languedoc plain in southern
France, rainwater seeped into the ground as volcanic gas and
rose up to the surface. As the water and gas met, they both
forced their way up through the open fissures in the limestone and
gushed with the release of carbonic gas. The water bubbled as if
boiling, earning this place the name, “Les Bouillens”, meaning
‘boiling water’ in French. Perrier is refreshing and it is a wonderful
alternative to soda. Perrier has a salty mineral undertones.
Type: Sparkling
Content: Sodium 9.5 mg
Magnesium 6.8 mg
Calcium 155 mg
Size: 0.75 liter
APOLLINARIS
Apollinaris, “The Queen of Table Waters” originates on a site which
has different layers of rock and volcanic occlusions: the Eifel. This
unspoiled landscape allows the water to penetrate into the
deepest layers of the earth. Natural carbonic acid collects from
the volcanic rock stratum, facilitating the absorption of many
minerals and giving this water its natural effervescence. Apollinaris
has a high level of purity with well-balanced taste.
Type: Sparkling
Content: Sodium 410 mg
Magnesium 130 mg
Calcium 100 mg
Size: 1 liter
GEROLSTEINER
Gerolsteiner is a sparkling thirst quencher with a fresh flavor and is
Germany’s most consumed mineral water. Special geological
circumstances typical to the Eifel are the reason for the inimitable
freshness and the healthy substances contained in Gerolsteiner.
The volcanic origin of the rock is responsible for the high calcium
and magnesium content in Gerolsteiner. A liter of Gerolsteiner
Sparkling covers a third of the daily requirements for these two
nutrients. Gerolsteiner tastes pleasantly natural and neutral.
Type: Sparkling
Content: Sodium: 118 mg
Magnesium: 108 mg
Calcium: 348 mg

ACQUA PANNA
The Acqua Panna source is nestled among wood beech and
chestnut forests on the slopes of Mount Gazzaro, 3770 feet high in
the pristine Apennines Mountains of Tuscany. This serene, vast,
unspoiled natural reserve brings forth a luminous water with
neither the slightest effervescence nor odor. The first sip has a
pleasant, fresh taste due to the low acid and low mineral salt
content. Not without structure, it imparts a taste that is light as a
feather, pleasantly soft and velvety.

Content: Sodium: 7 mg
Magnesium: 7 mg

FERRARELLE
Ferrarelle of volcanic origin begins its life in the south of Italy. It
takes ten years for the water to pass slowly through the
underground rock and uncontaminated depths of this source. As
it does, Ferrarelle water encounters the natural gas of an ancient
and now extinct volcano gaining its effervescence and
producing a full, pleasant taste.

Magnesium: 18 mg
Calcium: 362 mg

SAN PELLEGRINO
San Pellegrino flows naturally from the springs in Val Brembana, at
the foothill of the Italian Alps in the territory of San Pellegrino
Terme, near Bergamo (Lombardy). The water arrives at the
surface naturally enriched with mineral salts. San Pellegrino water
has presence due to its lively long-lasting bubbles, which feel
creamy to the palate, finishing with a slightly salty taste, wellbalanced with acidity giving an overall refreshing, thirstquenching taste.
Type: Sparkling
Content: Sodium: 36 mg
Magnesium: 53 mg
Calcium: 181 mg

SAN BENEDETTO
San Benedetto traces to the Republic of Venice, where it was the
favorite of aristocratic Venetian families. The water, tapped at the
surface in Ancient times, is now drawn from 1,000 feet below to
ensure that all its original features are unchanged. San Benedetto
trickles to its source from the glaciers of the Dolomites. San
Benedetto water is clean, pure, low in sodium and contains an
important balance of essential minerals.

TOPO CHICO
Since 1895, Topo Chico is extracted from the spring at the foot of
the Cerro del Topo Chico. It differs from other waters by both its
content of salts and minerals, and its characteristic carbonation.
The water is fizzy, with large sharp bubbles to give more depth
and character. Topo Chico water will give you a refreshing
sensation.
Type: Sparkling
Content: Sodium: 15 mg
Magnesium: 9 mg
Calcium: 28 mg

VOSS
Voss Artesian water was one of the first companies to combine
design with water. The cylindrical packaging, famously designed
by Neil Kraft (formerly chief design artist for Calvin Klein) added a
premium element to the water market in the United States. Voss is
bottled at an artesian source in the pristine wilderness of Southern
Norway, naturally filtered and protected from pollutants. The
water is generated and pumped from the artesian well deep
beneath the ground. The unprocessed nature of the water gives it
its fresh, clean taste.

VICHY CATALAN
Vichy Catalan rises from a very unique 140 F hot spring in Girona,
in the Catalan region of Spain. Ancient rulers, conquerors, and
health seekers have been coming to this spring for health benefits
since the Middle Ages. The TDS level in this water is mind-blowing.
You are certain to get full doses of several key minerals including
calcium, magnesium, sodium, potassium, bicarbonate, fluoride
and silica. The taste is complex with a high level of saltiness.

TY NANT
Ty Nant is a completely natural mineral water extracted directly
from an aquifer consisting of metamorphic mudstones, siltstones
and sandstones of Silurian age (approximately 450,000,000 years
ago.) The water's chemistry is monitored daily, and the land has
been managed to organic principles for the last 10 years. The
quality of the water is maintained by protecting the integrity of
the source and the production process, in a factory designed to
have as low an environmental impact as possible.
