Recipe for: Fruit and Yogurt Cup
Ingredients
 One tub of Vanilla or Strawberry
Yogurt (Try organic to be free of
antibiotics)
 A sliced Orange
 Four –Five Sliced Strawberries
 One sliced Apple
Directions
Mix all ingredients together and enjoy a great healthy snack full of
vitamins and calcium! Makes enough for four people. If you want to
make a smaller amount use just one small container of yogurt and
reduce the amount of fruit.

To prepare: Defrost Chicken if Frozen
Ingredients
 2 Whole wheat pitas (can be
found in the bread or deli section
at the grocery store)
 2 Chicken breasts
 1 Large tomato
 Salsa
 1 cup Shredded cheese
 Lettuce
 2 tsp of fajita seasoning (in the
seasoning aisle)
Directions
1. Sprinkle fajita seasoning on the chicken and slice chicken into
small pieces.
2. Brown chicken in a skillet.
3. Place cooked chicken, tomatoes, cheese, lettuce and salsa in
the half of a pita. Enjoy!

Ingredients















4 boneless pork loins
4 French bread baguettes split
length wise
2 tablespoons soy sauce
3 tablespoons fish sauce
1 tablespoon black pepper
3 cloves garlic
½ cup sugar
5 shallots chopped
2 tablespoons sesame oil
4 teaspoons mayo
Juice of three limes
1 onion chopped into rings
1 sliced cucumber
Three sliced carrots
Chopped fresh cilantro

Pound pork with a meat mallet into thin strips
Marinate pork in a mixture of soy sauce, fish sauce, black
pepper, garlic, sugar, shallots, and sesame oil for at least two
hours.
Remove excess marinade and brown pork in a skillet or on the
grill.
In the baguettes, spread mayo and then layer with pork,
cucumber slices, sliced carrots, and sliced onions. Sprinkle
with cilantro and lime juice.
Optional: Add sliced jalapeno as well.
Optional: Substitute pickled carrots and cucumbers.

To prepare: Defrost pork if frozen
Ingredients
 1 pound lean pork cut into cubes
 ½ cup vinegar
 ½ cup soy sauce
 ½ cup ketchup
 ½ tablespoon minced garlic
 3 bay leafs
Directions
1. Stir together all ingredients in a sauce pan
2. Bring to a boil on high heat
3. Reduce heat to medium/low and simmer with a cover on for
two hours or until tender.
4. Stir occasionally.
Recipe for: Latin American Red (or Black) Beans and Rice
Ingredients
 3 Tablespoons Oil
 1 chopped onion
 3 cloves minced garlic
 2 cups cooked red kidney beans
or black beans
 3 cups cooked rice
 Salt and Pepper to taste
Directions
1. Stir together onion and garlic and oil in a sauce pan. Cook
three minutes on high.
2. Stir in beans with their liquid, salt, and pepper
3. Reduce heat to medium/low and simmer until hot.
4. Stir occasionally.
5. Add rice. Cook until hot.
6. You can also add some optional cilantro and Worcestershire
sauce to taste.
Recipe for: Salvadorian Baked Fish
To prepare: Defrost fish if frozen
Ingredients
 ¼ cup olive oil
 2 large white fish fillets
 1 tablespoon garlic powder
 Salt and Pepper to Taste
 8 cloves minced garlic
 ½ cup lime juice
 2 lemons sliced
 2 sliced tomatoes
 1 onion sliced
Directions
1. Preheat oven to 425. Grease baking pan with spray or olive oil
2. Place fish in pan. Rub fish with olive oil, garlic, salt and
pepper, and lime juice.
3. Place lemon, onion, and tomato slices on top of fish. Cover.
4. Bake for about 30 minutes or until fish is cooked.
Recipe for: Vietnamese Egg and Pork Meatloaf
To prepare: Defrost pork if frozen
Ingredients
 5 eggs
 One pound ground pork cooked
 One bundle Rice noodles soaked
 1/3 cupped chopped mushroom
(optional)
 ½ teaspoon salt
 1 teaspoon fish sauce
 1 carrot graded (optional)
Directions
1. In a bowl mix the ground pork, 3 eggs, salt, fish sauce,
noodles, and optional mushroom and carrots.
2. Beat the other 2 eggs lightly.
3. Pour pork mixture into a greased meatloaf pan.
4. Pour beaten eggs on top.
5. Fill a larger baking dish halfway with hot water. The water
will help steam the loaf in the oven.
6. Gently place meatloaf pan inside the larger baking dish.
7. Cook in 400 degree oven for 30 minutes or until cooked
through. It is done when a toothpick comes out clean when
poked into the mixture.
Recipe for: French Ham and Cheese crepes
To prepare: Defrost pork if frozen
Ingredients
 1 and 1/3 cup low-fat milk
 2/3 cup water
 1 and ½ cup flour
 4 eggs
 ½ teaspoon salt
 2 teaspoon oil
 Sliced ham
 Sliced swiss cheese
 1 additional egg per crepe beaten
lightly.
Directions
1. Combine milk, water, flour, eggs, and salt in a bowl and
mix well.
2. Spray pan with cooking spray and heat up pan on high
3. Add 1/3 of crepe mixture to pan and tilt pan to evenly
distribute batter around entire pan.
4. Flip crepe after first side has cooked.
5. Place the additional beaten egg in center of crepe while
still in the pan.
6. Allow crepe and egg to cook. Then layer with ham and
cheese slices.
7. Note: crepe can be filled with other ingredients including
fruits, nutella, chicken, etc.
Recipe for: Chinese Fried Rice
Ingredients
 2 cups White or Brown Rice
 3 Table Spoons Light Soy Sauce
 3 Eggs
 ½ bag of frozen Peas and
Carrots
 2 chicken breasts
 2 chopped up green onions
Directions
1. Cook rice according to directions on the box or steam it in a
rice steamer.
2. Defrost and cut up the chicken into bite size pieces.
3. Lightly coat the chicken with one table spoon of the Soy
Sauce.
4. Brown chicken in a pan. When chicken if fully cooked
remove from pan and set aside.
5. Sauté the peas, carrots, and onions in a pan until they are hot
and soft. Remove from pan.
6. Scramble the three eggs and remove from pan.
7. Add rice to a large pan. Stir in remaining soy sauce with rice.
Stir and cook for 1 minute.
8. Stir in the chicken, peas, carrots, eggs, and onions. Mix well
and serve hot.
9. Makes enough for four people
Recipe for: Easy Baked Salmon
To prepare: Defrost Salmon if Frozen
Ingredients
 One small salmon fillet
 A table spoon of mayonnaise
 Garlic Powder
Directions
1. Heat oven to 350 degrees Fahrenheit.
2. Place the salmon fillet in a small baking dish that you have
sprayed with cooking spray or greased with low fat margarine
(helps the salmon not stick to the pan).
3. Rub the mayonnaise over the top of the salmon. Sprinkle
lightly with the garlic powder.
4. Cook until center of salmon in flaky and light pink (cooking
time will depend on size of fillet).
5. For a small salmon fillet, this recipe would feed two people.
Larger fillets would feed more. For a larger fillet, you would
need to add a little more mayonnaise and garlic.
