Please note the following:
 We brine all our poultry in sugar and salt. Due to brining, the bones will remain pink even if we cook it for multiple days. Pink bones do not mean that the poultry in not cooked, it means that it is brined.
 When (not if) you see a red ring on the outside of our meats and poultry, you are looking at a smoke ring.
That does not mean that meat is undercooked. If you do not see the smoke ring, please feel free to return it, it means that we did something wrong.
 During busy times, we do sell-out of Smoked meats.
The brining and smoking process extends over multiple days and we cannot freeze the product. Please come early.
 Good BBQ is difficult to cook but very simple to eat, just come in an enjoy All Y’all. Forget the rules!
