1. Generalities
The measure and maintenance of a maximum rate of total polar materials (% TPM) is the
reference measure for the authorities concerning the determination of quality of food oils. The
existing legislation imposes to the restaurateur a % TPM according to the national directives, for
ex. : EU = 25% - CH = 27%.
The Clearfry 2TM system measures and monitores the quality of your food oils through these polar
materials. Therefore, the automatic measures of our system allow you to always monitor the quality
of your food oils in accordance with the laws.
The result is transmitted to the user in two manners, by means of :
1. one LED (Light Emitting Diode) for an immediate visualisation of the oil condition
2. a graphic LCD display indicating numerically the rate of polar materials, as well as the
messages (utilisation + errors).
2. Start
The system automatically switches when the deep fryer is connected to the power grid.
The green LED will light up momentarily and then switch off again during the whole initialization
process.
During start up of the system, the LCD display will light up and show after some seconds :

After about one minute, the rate of polar materials of the 2 tanks is indicated :
Tank 1: 11.9%
Tank 2: 24.1%
If there is no oil in the tanks or a problem with one sensor, a rate of polar materials of 0 % or a
specific message will appear instead of the standard display (see sections 8.2 and 8.3 of this
manual).

6. “RESET” of the system
If you note, for example, that the system is blocked, you can restart the Clearfry 2TM system as
follows :
By pressing during 3 seconds the switch « ENTER » you can enter into the user’s menu. The roll
off the articles of the menu is done with the push button « SELECT », whereas selection and
confirmation are obtained by pressing the button « ENTER ». Screen display :

The green LED allows to read immediately the quality of used oil. The following colour code is
applied :

The limit rate of TPM from which the LED goes from the ignition mode to the flashing can be
modified in the menu (push the button « ENTER » during 3 seconds).
8. LCD Screen
8.1. Normal functioning
The LCD screen shows the rate of total polar materials (% TPM) of each tank. The
numbering of the tanks is always from the left to the right, viewed from the front side.
So, we will have, for example, for the first tank a TPM at 11.9 % and for the second at 24.1
% through following message :

8.2. Particular cases
a) Sensor in the air (without oil contact)
When the tank is emptied and left without oil, after a certain draining time, the
sensor detects that it is in the air and shows the corresponding message.
For example, if tank 1 is empty, there will be the following message :

b) Oil change
From 25 % of TPM (or acc. to your programming), the green LED is flashing,
indicating that it is time to replace the oil. You need to know that in the EU, frying
oils can be used, according to the law, until a degradation rate of 25 % of TPM (CH
= 27%) and that the precision of the system is of ± 2 %.
Above the maximum percentage of TPM, the screen of Clearfry 2TM continues to
show the actual rate, in a normal way. Only the LED pays attention to the exceeding
of the limit.
The systems detects the oil change (passing from an oil of more than 20 % TPM to
an oil inferior to 10 % TPM). This operation takes between 10 and 30 minutes,
depending on oil temperatures.
When the sensor is immersed into the new oil, after draining the used oil, the
system will still show the TPM value of the old oil, before it detects the change. The
LED will therefore also continue to flash if the TMP rate was superior to the limit.
As soon as the change is detected, the message « * oil chge » will appear on the
screen during 30 minutes and the LED does not flash any longer.

c) Boil out
The immersion of the sensor into water will cause a saturation.
For not being confused with perturbations in the measure of the fryings, the system
will validate this state only after about 10 minutes.

It is very possible that this message appears still after a boil out, even when the oil
is hot. It needs, indeed, some brewings so that the whole water shut up in the
support of the sensor escapes and that the system is able, again, to take correct
measures. The display return afterwards to the standard mode (% TPM).
8.3. Error messages
In case of problem with the Clearfry 2TM sensor, the system shows a message mentioning
« ERR ».
The below table shows various cases of errors the system may indicate. We recommend
to carry out the prescribed actions one after the other, by controlling at each step if the
problem persists (please wait at least 20 seconds after each action for the control).
Should, however, the problem persist, do not hesitate to contact our technical service
(Tel. 0041-21-637 32 62).

9.1. Setting of the interface language
By choosing the option of language setting, we obtain a submenu proposing French,
German or English language.
After choice validation by « ENTER » , the system confirms through a message :

9.2. Setting of date and time
The ClearFry 2TM protects the measured values in its backup. In its files, the hour
preceeds each measure. It is therefore important that date and hour are always well
adjusted. .
If the ClearFry 2TM system has been disconnected from the power grid during several
days, it will enter automatically into the setting of date and time during the restart.
Note that it is always possible to control the accuracy of timing by a simple pressure on the
button « SELECT ». The information is then shown on the LCD screen.

Increment the number of years from one unity at each pressure on « SELECT».

As mentioned before, set the hours (24 hours mode) with « SELECT », confirm and
pass to the minutes with « ENTER». The same for the setting of minutes.

9.3. Setting the maximum limit of % TPM
The user can reprogram, at will, the maximum limit where the system informs him of the
necessity of an oil change by flashing the green LED. This limit is regulated by factory
default to 25% TPM.
1. After selection of menu « 3 Thresholds %TPM », the following result is obtained :
3.1 Regulate ?
Confirm with « ENTER » or return to previous menu with « SELECT ».
2. You can now regulate the maximum threshold of oil degradation.
The threshold is adjustable by the user between 15.0 % and 34.0 %, by steps of 0.5 %
at each pressure on « SELECT». The current threshold is indicated in parenthesis.

3. The system reminds the choosen value and saves it :

9.4. Data backup on USB key
Clearfry 2TM saves the data of polar materials and the temperatures in real time. The data is
saved on a monthly base and you can save the files each time by using the fonction data
backup. For this, you must use a USB ALPSENS key. Open the protection valve at the
right side and put the USB ALPSENS key in.
The saved files will be : F+year+month, as for ex. : F_2010_09.

After use, always check that the protection valve is closed, in order to assure the
tightness of the system.
9.5. Reset

After every 30th day, the Clearfry 2TM system warns the user that a preventive cleaning of the
sensors (Boil out) must be done. This is visible by the red LED on the LCD display. When the red
LED is lit, the sensor must be cleaned.
Confirm after the cleaning to switch off the LED.
To confirm the cleaning of the sensors, roll off the menu till point 6.

Precision of the measuring system Clearfry 2TM
The precision of the system is +/- 2 % TPM.
11. Conditions for use
The most precise measure can be obtained when there is no activity in the tank during a long
period. We recommend, for example, to record the state of your oils in the morning, after the deep
fryer was cooled during the whole night. At that time, you have only to empty the cold oil, without
any burn hazard.

12. Periodic maintenance

Monthly frequency
The tests have shown that the boil out recommended by the manufacturers of the deep
fryers must necessarily be carried out every month, in order to get an efficient cleaning of
the Clearfry 2™ system.
 Cleaning of the sensor
Monthly frequency
If you note an abnormal level of dirtying of the sensor (breadcrumbs), we recommend you
to clean it by removing the breadcrumbs AT COLD with the help of the cleaning kit CF2.
ATTENTION: Never use for the cleaning of the sensor a tool or an object that can damage
the sensor (unsupported by the manufacturer’s warranty).
13. Precautions
It is not allowed to use the column for pushing the deep fryer !

Washing :
The sensor does normally not need any specific cleaning. It is washed automatically during
a boil out of the tank. If there is an abnormal level of dirtying of the sensor (breadcrumbs),
we recommend you to make the boil out of the concerned tank.
ATTENTION: Never insert anything into the sensor failing to deteriorate it irreversibly.

Calibration :
Our systems are factory calibrated at all temperatures. The calibration certificate, attached
to the system, is valid for one year. We recommend you to perform a yearly calibration by a
technician authorized by Alpsens Technologies SA, in order to grant a good correlation
between the Clearfry 2™ system, the official measures ISO8420 and the standards ISO
9000.
 Burn hazard :
Never remove a hot sensor. This may cause serious burns due to the high termperature of
the oil in the deep fryer.
Therefore, ensure that the sensor is always cold before removing.

14. Frequently asked questions

The oil has been changed and the green LED is still flashing, is this normal ?
YES.
The detection of an oil change by Clearfry 2TM can take between10 and 30 minutes. You can
always restart the system (see chapter : RESET), if nothing happens.

The tank was emptied and the LED shows still the same result ?
YES this is possible.
Depending on the oil temperature in the tank at the moment of drain, the sensor is not
dripping immediately. This happens generally at low temperatures (<40°C).
A certain quantity of oil remains then within the sensitive area of the sensor, preventing the
detection of the passage in the air (with extinction of the LED).

During a boil out, the display of the LED shows always the same result ?
YES.
The system takes about 10 minutes to detect the saturation caused by water. The message
will be visible on the screen and the LED off, then after about 20 minutes, the boil out mode
will be detected and shown by :
T1: ERR : Saturated

The fryer is off (main switch on « 0 »), but the green LED is still on – or flashing ?
YES.
The Clearfry 2TM system measures continuously the quality of the oil as long as the deep
fryer is connected to the power grid. Thanks to this function, the measured value of TPM,
read in the morning before switching on the fryer, is the most accurate.
