Light up your mind! AFTER DARK AT ALL SAINTS FUN CLASSES FOR THE COMMUNITY 2014 Welcome to our fifth AFTER DARK at ALL SAINTS’ program! Got the winter blues? Suffering from cabin fever? Need to have some fun? Here is a way to beat the doldrums of a dreary winter in a congenial atmosphere exploring new and old interests! We are excited to again offer these classes on a wide variety of fascinating topics to everyone in our community. For the fifth consecutive year we have invited church members, friends and neighbors throughout our area to share their passions by offering courses and workshops to people of all ages. In this catalog you will find some remarkable opportunities taught by fascinating and richly experienced individuals. All the net proceeds from this program will be used by All Saints Church to give back to our community through our outreach programs. Over the four previous programs, we have given back $34,100 to agencies and organizations serving our community. The program this year will again support local agencies and organizations helping many of our friends and neighbors in need on the Outer Banks. Last year, this program generated $11,100 which was given to support four agencies - Interfaith Community Outreach, Food For Thought, Community Care Clinic, and Room in the Inn. COOKING Class 500 – HEALTHY GOURMET (CLASS IS FULL) WES STEPP, owner and Executive Chef of the Red Sky restaurant in Duck for over 14 years, believes gourmet food can be not only delicious, but healthy as well! What began for him as a childhood passion for cooking has evolved into a love affair with food. Join Chef Wes for a special evening and learn from this experienced Outer Banks chef and restaurateur how to create gourmet food in a healthy style. DAN LEWIS is an experienced chef with over 25 years of experience. You saw Dan and Scott on Food TV’s “Diners, DriveIns, and Dives.” Over the years, Dan’s growing interest in Thomas Jefferson led to his guest-hosting “The Thomas Jefferson Hour,” exploring food of the era on many local NPR radio stations. Yes, there will be examples of Chinese cuisine and you’ll get to use chop sticks! But your palate will also experience the tastes of other Asian countries – Thailand, Korea, and Japan – all made with ingredients that are available locally. Located in the oldest house in Duck, the restaurant has been serving great southern food and offering good times for vacationers and locals for nearly 20 years. In past years, Ashley and Head Chef JOE LEBLANC have offered students their secrets for Roadside’s famous Clam Chowder and their great Shrimp and Grits. Chef McGann will offer a cooking demonstration from his repertoire of over 30 years of experience, almost 25 years of which have been with the renowned Blue Point in Duck. Monday, Feb 3rd Class 510 – SOUTHERN CUISINE (CLASS IS FULL) Chef MAC RITTER, a graduate of the prestigious Culinary Institute of America in Hyde Park, New York, is Executive Chef at Duck Woods Country Club. He has worked at various restaurants over many years, including as Sous Chef for Buckhead Life Restaurant Group in Atlanta and as Executive Chef for restaurants on the Outer Banks, including Owens Restaurant in Nags Head. He is professionally experienced in creative food preparation using many cultural backgrounds. Join Chef Mac as he draws on his broad experience and offers a marvelous evening in our kitchen preparing contemporary Southern dishes. Tuesday, Feb 11th Class 511 – SOUS VIDE (DONE) French for "under vacuum", Sous Vide is a method of cooking food sealed in airtight plastic bags in a water bath for longer than normal cooking times, at an accurately regulated temperature much lower than normally used, typically around 130° to 140° for meats and higher for vegetables. The intent is to cook the item evenly, to avoid overcooking the outside while keeping the inside at the same "doneness," which keeps the food juicier. If you consider yourself a Foodie or enjoy exploring cooking technologies, join JIM BICKFORD, an amateur chef trained by professionals, for this exciting first time event. Thursday, Feb 13th Class 512 – EVERYDAY FOOD FOR EVERYDAY EATERS (DONE) Ocean Boulevard Restaurant Chef de Cuisine MIKE THOMAS and Pastry Chef ANGEL DOEBLER believe in the importance of feeding our families and our bodies well. This year, Mike will explore the versatility of ground meat and meatballs, not just as the centerpiece of a great meal, but as an accompaniment and starter. Angel will address the use of baking mixes, how we’ve become so dependent on the convenience of them without really knowing what they contain. Students will be treated to a glass of wine as they taste, experiment, and explore the delicious combinations that both chefs will create. Come hungry! Wednesday, Feb 12th Class 513 – WORKING WITH YEAST BREAD (CLASS IS FULL) The taste and aroma of freshly baked yeast breads are a treat for every age! Spend an evening with MIRIAM CALHOUN, a retired microbiologist with over 40 years of experience as a home bread baker, and her husband, DICK CALHOUN. Learn how to use one basic yeast bread mixture to make at least three different, great tasting breads – rolls, cinnamon twists, and sticky buns. This hands-on baking experience will be amazingly simple for any skill level, from beginner to advanced. Class size limited to 7 students. Tuesday, Feb 18th Class 514 – COOKING FOR KIDS – SATURDAY CLASS (DONE) Kids, parents, and grandparents will enjoy spending time with this retired teacher, mother and grandmother in a fun and creative morning cooking lesson for kids! RUTHIE CHARLTON will help children interested in cooking to make some fun foods, such as “ice cream in a bag” and “Abracadabra Cake.” Students should bring a microwaveable custard cup and a microwaveable pie pan. Note that this class is offered at 10:00am on Saturday, Feb 8th CRAFTS & HOBBIES Class 520 & Class 521 – SURF FISHING – Two Separate Classes (DONE) Anyone living on the Outer Banks knows this is a surf fishing Mecca! The “from heres” and the “come heres” know what fun surf fishing can be along our coast. This is the class you’ve been waiting for! There are two to choose from – Surf Fishing 1 (#520) made easy for the family and Surf Fishing 2 (#521) for the advanced angler. STU BALDWIN, Past President of the OBX Anglers Club, BOB RICKABAUGH, and JIM KEENE will share their experience and know-how. Students will learn how to read a beach, tie knots, rig baits, and choose the right equipment for the right fish, whether flounder, trout, bluefish or red drum. Class 520, Tuesday, Feb 11th & Class 521, Tuesday, Feb 18th Class 522 – PAINTING FROM YOUR FAVORITE PHOTOGRAPH (CLASS IS FULL) TRACEY BELL has a life-long love of painting. She graduated with a BS in Art Education, has previously worked at the Dare County Arts Council, and is presently the Cottage Craft coordinator at Spring Arbor. This class will teach you how to create a painting from a favorite photo, using the principles of shape, color, value and tone. The techniques of how to block a painting with color and three values to give it depth and interest will be explored. Along with an 8”x10” black & white copy of your chosen photograph, please bring to class a water vessel, acrylic paints, and brushes. Wednesday, Feb 26th Class 523 – A PHOTOGRAPHERS GUIDE TO THE OUTER BANKS (DONE) Highly acclaimed local photographer, MARK BUCKLER, will provide tips on how to create fine images of our spectacular coastal environment. Mark will also present his favorite images of the past year and explain how they were made. This class will interest lovers of nature and the Outer Banks, as well as avid photographers. Mark embarked on his photographic journey as a high school student and continues to be a premier photographer in the region. Tuesday, Feb 18th Class 524 – INTRODUCTION TO CERAMICS –Three Thursday Nights Many of us enjoyed playing in the mud or with clay when we were kids, and appreciate that skill is required to take that fun to the next level. Here’s an opportunity to spend three evenings with PATRICK SCHEG, the dynamic Ceramics Instructor at College of the Albemarle, Dare Campus, and a potter for 13 years. Students will gain foundational knowledge and experience with clay as a medium for making hand built works of ceramic art, and will create their own “pinch pot.” Patrick’s love for his chosen field is infectious – come catch the bug! Thursdays, Feb 6th, Feb 13th,& Feb 20th Class 525 – ART JOURNAL COLLAGE (DONE) Join DONNA and MORGAN HOLLOWELL, artists, teachers, and owners of Déjà New, to explore the “inner you” through expressive art techniques. This team teaches creative classes for children and adults, art journaling, and do-it-yourself classes. They will lead students on a path to play with various artistic media and create an art journal page. Collage materials are supplied. Wednesday, Feb 19th Class 526 – IDENTIFYING ART (DONE) Have you ever been to an estate sale, yard sale, or auction, or even inherited a work of art and wondered what it was and if it was real? Now you don’t have to attend NPR’s Antiques Road Show to get answers! Join MELANIE SMITH, owner of our local Seaside Art Gallery and an accredited art appraiser, for this opportunity to learn how to recognize the differences in art media and to differentiate between real and fake art. Students can even bring a piece of art to class and get help identifying it. Wednesday, Feb 12th Class 527 – STAINED GLASS – Two Successive Nights (CLASS IS FULL) SANDY BRIGGMAN started her adventure in the art of Stained Glass in 1998 and was taught by local artists, Ellinor and Bob Nick, at Nick-E Stained Glass in Wanchese. She has created numerous stained glass pieces that you can find on the Outer Banks and even overseas. Sandy’s love of stained glass branched out to teaching the craft for the past six years in Wanchese and now at All Saints’ Episcopal Church. In Sandy’s class, each student will work with glass, grinders, foil, and solder in order to make a stained glass sun catcher to take home at the end of the two-night course. Wednesday and Thursday, Feb 5th & Feb 6th Class 528 – JAZZED UP TERRA COTTA (CLASS IS FULL) Taught by Currituck Master Gardeners DORIS FLATTUM and SHELLY MURRAY, this class will give students creative and inexpensive ideas and approaches for seasonal decorating – with an unusual starting point! With the help of a simple pattern and a touch of shoe polish, terra cotta pots can be turned into a variety of seasonal decorations. These eclectically designed pots can also be used as oneof-a-kind serving pieces. Class size is limited to 6 students. Tuesday, Feb 18th FLOWERS and GARDENS Class 530 – CREATING A BACKYARD BIRD HAVEN (DONE) You’ve seen his photographs in our newspapers and elsewhere, including in magazines and books, and on TV. He describes himself as a “nature nut” and his images of birds and wildlife are spectacular! Join JEFF LEWIS, Gardens and Nursery Manager at The Elizabethan Gardens, for an evening discussion on how you can enhance your landscape to attract birds. Jeff will discuss the role of plants and water features, as well as offer photography tips as a bonus! This is a unique opportunity for anyone with an interest in birds, of any skill level or any age. Thursday, Feb 6th Class 531 – NO MO’ MOW: OPTIONS FOR LAWN ALTERNATIVES (DONE) Are you ready to retire your lawn mower? You may be familiar with the creative work done by landscape architect, land planning and environmental consultant JIM CONNERS, owner of Laughing Gull Design Studio in Kitty Hawk for 15 years, and his wife LECKIE CONNERS. This class will explore a variety of interesting options for reducing or even eliminating lawn areas in the landscape. Pros and cons of having a lawn will be discussed, with a focus on alternative choices that can offer financial, environmental, and maintenance advantages. Monday, Feb 17th Class 532 – FLOWER CONTAINER GARDENING (DONE) This course will give you great ideas for decorating your landscape with containers, including “how to” information on types of containers, preparing pots, and soil mixtures. MARY JANE SLESINSKI has many years of gardening experience, with the past four as a Certified Master Gardener. She has lived on the Outer Banks for seven years and, like many of us, has struggled to garden in the heat, humidity and low rainfall that characterize this area. The class will discuss the choice of planters, planting medium, and plants that survive the stresses of growing in containers. Along with some design ideas, the course will emphasize methods of planting and maintenance that minimize effort and maximize enjoyment of the plants. The class will provide ample time for questions and discussion, as well as handouts with recipes for planting media and lists of suitable plants. Monday, Feb 3rd Class 533 – BASIC FLOWER ARRANGING (DONE) Here is a great way to bring a smile to your face and brighten up any room! Learn the basics of easy fresh flower arrangements, including the selection of containers, flowers and foliage. PAULA MYATT, owner of Sea Dragon Gallery in Duck and a member of the Flower Guild at All Saints, has been a creative flower arranger since she was five years old. This is an ideal course for beginners or anyone wanting a fresh look at flowers! During the class students will have the opportunity to create two small arrangements that they may take home. Course size is limited to 12 participants. There is an additional fee of $12 per student for flowers and supplies. Thursday, Feb 20th Class 534 – GROWING DAYLILIES AND IRISES (DONE) Join local Veterinarian DR. CHRIS SHEA for an informative and fun evening exploring the world of these beautiful flowers. Chris is an avid gardener who has been hybridizing daylilies and irises for over 15 years. Participants will receive an overview of the cultivation and propagation practices that will enable them to raise beautiful irises and daylilies. This will be an enjoyable “how to” class. Monday, Feb 3rd HEALTH & WELL BEING Class 540 – FITNESS AS WE AGE Join four professional and licensed local physical therapists for this very special opportunity that will encourage better posture and body mechanics. The three professionals offering this class, KELLY HALL, DPT, LAUREL HUNTINGFORD, DPT, PATTY GALLECK, PT, and CARRI BLANKENSHIP, MPT, all work at Coastal Rehabilitation in Southern Shores. Students will receive a hands-on, one-on-one evaluation; education on four key components of fitness (balance, strength, posture, and endurance); and instructions on how to incorporate exercises into daily life. This local Outer Banks Physician is offering this class on the importance of a balanced life and ways to promote healthy living. DR.CHRISTINA BOWEN is a Primary Care Physician boarded in Family Medicine and Hospice/Palliative Medicine who has been practicing since her 2003 residency. Dr. Bowen’s main focus will be integrative medicine: how to practice wellness of the mind, body and spirit. The class will offer life-enhancing information and feature interactive discussion. Class size is limited to 10 students. Monday, Feb 24th Class 548 – BREATH OF THE SOUL (DONE) This practice allows one to access the deeper messages of life and the soul using breath as the messenger. Wednesday, Feb 5th Class 549 – MENTASTICS Mentastics is the self-help aspect of Trager body movement therapy. It empowers students to find movements that elicit spaciousness, ease and fluidity. The movements are weight-driven, effortless and pleasurable and can be used as an aid to agelessness, joy, confidence, and thereby more liveliness. This presentation promises to be a remarkable review of available data and information, as well as recent research done by the U.S. Army Corps of Engineers, Coastal and Hydraulics Laboratory. JESSE McNINCH, Ph.D., is Director of the Field Research Facility located in Duck, NC. His presentation will provide a scientist’s assessment of the data associated with storm history. Jesse has degrees in Marine Science from the University of Southwestern Louisiana and the University of North Carolina. His research couples geology and hydrodynamics. Players are dealt two stacks of cards ("the Hand" and "the Foot"). The "Hand" must be played before the "Foot" is used. The object is to get the most points by making canastas and using all the cards in one's hand and foot. Play continues up to a score of 10,000 points with the meld increasing with each round. Similar steps danced at Mexican fandangos were also an influence. Participants of this fun class will learn how to do a basic two-step, as well as Country and Western dance floor etiquette. Couples and singles are invited to join long-time Two-Stepper MURRAY ROSS and learn various dance positions, including an open position with the lead's right hand on the follower's left shoulder; a closed position with no space between the partners; and a closed overhand position in which the lead wraps the left forearm over the follower's right forearm and clasps hands with the palm against the back of the follower's hand.
