Finally! Here's the recipe for Chicken Parmesean Wraps! (Remember - my little chef gave it a high 5!) Ingredients: Whole Wheat Tortillas (Fajita size work well) Cooked chicken or chicken cold cuts Mozarella cheese Grape tomatoes Small Onion Kosher Salt Black Pepper Small Clove Garlic Fresh Basil, Marjoram, Oregano, Terragon Cranberry Juice Directions: Using a butterknife, cut 10-12 grape tomatoes into quarters, and dice 1/4 of a small onion. Use the side of the blade to smash the garlic, then peel and dice the garlic. (Yes, with a little practice, all this CAN be done!) Place tomatoes, garlic and just enough onion for your taste in a small microwaveable bowl, preferrably glass. Add about 1/4 tsp salt, and 1/8 tsp. pepper. Wrap about 1/2 tsp. each of the fresh herbs into a bundle and use the butterknife to cut the leaves into thin shreads (chiffonade) and add to tomatoes. Finally, add about 2 tbsp. cranberry juice to tomato mixture. Cover with paper towel and microwave on high for 1 minute. Careful when removing bowl from microwave! Use potholders if necessary. After removing tomatoes from microwave, wrap 1-2 tortillas in damp papertowels and place on glass or stoneware microwave safe plate. Microwave for 15 seconds. To assemble the wraps, place one tortilla on the microwaveable plate. Layer the chicken, tomatoes, and mozarella cheese near one edge of tortilla. When desired amount of filling is placed, fold in sides of tortilla and roll toward empty edge. Place on plate flap down. Cover with damp paper towels from warming tortillas and microwave for 1 minute. Allow to sit for 1 minute in microwave before removing. Makes 1-2 wraps. Enjoy!
