Wash hands when 1 st entering concession stand & every time you leave & re-enter.
Hot Dog Cooker:
1.
Turn cooker on with the “ON” switch. Turn the heat dial to “HI”
2.
Use hot dog tongs to put hot dogs on the rotating cooker (hot dogs are located in the large refrigerator in the back room).
3.
Start with 5 hot dogs.
4.
Once hot dogs have heated through (10-15 minutes) turn the heat dial down to
“2” Temp of hot dogs must be 160 before selling
Mini Donuts
1.
Turn on machine to stand by and wait 5 minutes until ready. Set speed dial to 2/3
2.
Place only 12 dounuts at a time on belt. Make 2 bags to start
3.
Once donuts come out the bottom, place in bag and add cinnamon/sugar mix.
4.
Shake bag and crease at top to seal bag.
5.
Place in warmer. Make sure warmer is set on medium and has water in the lower holding tray. (use distilled water only)
Pretzels
1.
Place some salt from the salt container on a paper plate. Don’t place pretzel directly into salt container.
2.
On light games make as needed. For busy games make 4 and keep in warmer.
3.
Take pretzels from freezer and Microwave 30 sec on high.
4.
Place salt on ½ of pretzels by spraying with water from spray bottle marked water only. Dip moistened pretzel onto salt placed on paper plate.
5.
Place salted and unsalted pretzels into warmer.
6.
Extra salt and cinnamon is located on the shelf in the back room.
Nachos:
1.
Check to see that the machine is plugged in and that the cheese is warm and working. If the machine was unplugged, plug it back in.
2.
If the cheese is getting low place a new bag on top of old one to get it warming.
Cappuccino/Cocoa Machine
1.
Stock cups and lids. (same cups and lids as coffee)
2.
Check to see that the cocoa, cider and cappuccino compartments are at least half full by opening the front panel which swings out to the left. Lightly shake the plastic containers to move the mix to the bottom of the dispensers.
3.
If mix is needed, lift up on the top metal lid of the machine and remove the top plastic lid for the container(s) that needs replenishing. Add the complete bag
4.
Add additional mix (complete bag only located in boxes directly below the machine).
5.
Test by depressing the green dispenser button to see that the cappuccino or cocoa is dispensing and not just hot water.
Regular Coffee Machine
1.
Stock 12 oz Caribou cups and brown lids. (same cups and lids as hot cocoa.
2.
Turn on the “on/lower” switch and wait about 3 minutes for water to heat up.

3.
Pull out clear plastic basket and place a coffee filter inside basket (filters are located in boxes directly below the machine).
4.
Use scissors to cut open a coffee pouch (located in boxes below the machine) and dispense into coffee filter.
5.
Slide basket with filter and coffee back into the machine.
6.
Open the top of the coffee carafe and remove the interior plastic/metal parts.
7.
Position one of the coffee carafes directly below the basket.
8.
Depress the “start” switch (top right). Only depress once.
9.
Once filled, replace the metal parts, close the lid by pushing firmly on the top, position the small metal lever so the top dispenser operates properly
Slushie Machine:
1.
Check float level on top of the machine (clear bubble with white float indicator inside).
2.
If float is at least ½ way down, add slushie premix (located in gallon jugs in backroom refrigerator) by lifting up on the yellow plastic lid on top of the machine and turning to the right. Pour slushie premix into opening. Close the lid.
3.
Rinse out empty jug of premix and leave with lid on the floor of the backroom near the pop cooler.
Popcorn Machine
1.
Turn on all 3 switches inside the machine (“Kettle Heat”, “Kettle Motor”, and
“Lights Warmer”).
2.
Wait 4 minutes to heat up.
3.
Add oil pouch and popping corn to kettle using scissors to open packaging
(popcorn pouches are located in boxes directly under popcorn machine).
4.
When popping is almost completely done, dump out remaining popcorn from kettle by pulling down on the black handle (while last kernels are still popping).
5.
Make enough for 3 batches by repeating steps 3 and 4.
6.
After last batch is made, turn off Kettle Heat and Kettle Motor switch.
Register
1.
Turn key to REG
2.
Hit “No Sale” button on register. Door will open
3.
Count cash in drawer and record the date, the amount, and your name on register log sheet that is kept below the cash box in the drawer. This total should match the last entry. Do not include any coins or rolled quarters in your count.
Other
1.
Check that coffee condiment tray is full. Replacements are in the clear file boxes in back room and under the cooler.
2.
Re-stock pop cooler with cold pop from pop cooler in back room if needed.
3.
Put “Concession Stand Open” sign on the vending machines and ask the rink manager to turn the vending machines off
Open Concession Door
1.
Turn key in roll-down door a full turn clockwise to unlock. Leave key in door. Use metal crank to roll up door.
