I am writing this letter to inform you of the excellent educational opportunities this show could offer your students and would like to invite your school to participate in this event. Please find enclosed initial information regarding Wingham Beef Week 2011. As a result of the strong association with our major sponsor, Wingham Beef Exports, your students will be able to compete in a full “Hoof & Hook” carcass appraisal competition. In our Junior Judging component, students will assess not only live animals, but will follow these animals, plus animals from other market categories, right through to the chiller room floor, where a carcass appraisal competition will take place. In addition to this, students compete in a Beef Appreciation competition where they will judge both retail and primal cuts, as well as a visual assessment of their own school carcass. Certainly a unique “Paddock to Plate” experience. From a Senior and Junior Syllabus perspective many of the course objectives are covered with these activities, especially the Senior Product Study. If you are interested, but do not anticipate having a suitable animal for next year, you would still be more than welcome to compete in the Judging, Parading, Beef Appreciation and educational activities. Extra parading animals can be made available if this is the case. For further details contact myself or the Wingham Beef Week Secretary by simply posting or faxing the enclosed Expression of Interest form by Friday 4th February 2011 (T1W2) if not before. A full program with entry forms will then be sent to you in March, with entries closing on Monday 2nd May 2011. Note: Schools who have previously competed/attended must still return their expression of interest form stating approximate numbers of animals and students they intend to bring.
