I. INTRODUCTION
“RKR Tapsihan ng mga walang jowa” is a newly established business this year, 2024.
It is owned by Keister Concepcion and located in Brgy. San Carlos, Purok 3, Lipa City,
Batangas. His motivation and perseverance drove him to pursue his dream of opening a small
restaurant business. All menus consist of silog meals, and he also sells street food right
outside the place. Although the tapsihan is a small establishment, accommodating 5-10
people with budgeted meals, all his customers keep coming back and have provided satisfied
feedback on his service and meals. His inspiration for starting this business comes from his
friends, relatives, and mostly his mom working abroad. Sooner or later, his business will
thrive and he will have more branches of tapsilogan here in Lipa due to his hard work and
perseverance.

II. STATEMENT OF THE PROBLEM
An interview with the restaurant owner and customers provide us with important information
about the difficulties that they encounter. These insights will serve as a foundation for researchers to
address the issues, guiding them toward appropriate solutions.
Below are the problems identified during the interviews:
1. There are not enough kitchen appliances.
2. There is barely enough room for 5–10 customers at most.
3. It has no parking area.
4. The sun's rays cause the location to get warmer in the morning.
5. Serving food takes a long time, especially during rush hours.
6. Insufficient number of employees. (Most often, 1-3 workers only.)
7. Products are expensive.
8. The materials are not organized.

IV. PROPOSED SOLUTION AND RECOMMENDATION
1.
Use 5S methodology if applicable (if the owner approved to implement it, show
images per stage)
In a restaurant, the 5S technique is actually very significant. It contributes to keeping a
workspace tidy and orderly, which is essential for food safety and productivity. Sort, Set
in Order, Shine, Standardize, and Sustain are the terms for the 5 S's. Restaurants may
increase output, cut waste, and provide patrons a positive eating experience by putting
these ideas into practice. Below are some of the photos we captured in the RKR
Tapsihan ng mga walang jowa.
SORT
In the sort phase of 5s methodology this restaurant needs to know the benefits of
organizing and decluttering its workspace. They can think of it as cleaning up the kitchen
sink and tables and getting rid of things they don't need anymore. In this way, they make
the surroundings more efficient and useful. It makes it easier to find things, lowers the
risk of making mistakes, and makes the kitchen safer generally. It's like starting over
with your business and making it ready to do well!

SET IN ORDER
In set in order phase of 5s, It's about putting things away in a way that makes sense and
works well. This makes things run more smoothly and saves time when making food or
serving customers. They can make it easier for staff to find what they need by putting
ingredients, tools, and utensils in separate places. Having a well-organized setup can
help you get more done, make fewer mistakes, and give your customers a smooth eating
experience.
SHINE
In order to maintain efficiency, cleanliness, and hygiene in a restaurant, the "shine"
phase of the 5S technique is essential. Its implementation guarantees complete cleaning
of all areas, equipment maintenance, and surface sanitization—all critical for food safety
and customer pleasure. Additionally, it makes the workplace more pleasant and less
dangerous by reducing the possibility of spills or debris-related mishaps.
STANDARDIZED
The standardized phase in the 5S technique is crucial in a restaurant as it ensures the
implementation of consistent processes and practices throughout all operational sectors.
By implementing it, tasks are consistently performed resulting in enhanced efficiency,
productivity, and quality control. Standardization aids in the optimization of operations,

minimizes errors, and simplifies the training of new personnel. In the end, it helps create
a more structured and unified restaurant setting, which improves client contentment and
overall efficiency. In short, they need to maintain what they do in Sorr, Set in Order and
Shine phase.
SUSTAIN
If a restaurant uses the sustain phase of 5S, the changes that were made in the Sort, Set in
Order, Shine, and Standardize stages will stay in place over time. It helps keep things
clean, organized, and running smoothly, all of which are important for keeping
customers happy.

To address the challenges they are facing, we proposed a floor plan that includes the
strategic positioning of related areas, such as the kitchen and cashier/customer service
area, was a crucial aspect of our plan. The layout greatly facilitates staff communication
and coordination, leading to time savings and improved operational efficiency. In
addition, we’ve included a small restroom for the customers that aims to improve overall
convenience and comfort of their experience at the establishment.
They can make the experience more smooth for both employees and customers by
putting these adjustments. This could eventually increase their revenue in addition to
increasing client pleasure.
Our overall objective in creating this floor plan was to arrange the restaurant to best
serve customers, increase efficiency, and ultimately help the restaurant succeed."

To resolve the conflicts in taking orders from customers that usually takes up a lot of
time and space in the process, we proposed a solution which is to create a Facebook Page
named after the business establishment where customers can privately send their orders
using Facebook Messenger. First off, customers can find it convenient when a page on
Facebook is used to build an advanced ordering system. Customers are able to browse
the menu, place orders, and arrange for pick-up times in advance by doing these things.
The procedure becomes more efficient and streamlined. Customers won't have to drive
around in circles looking for parking, saving them the hassle of navigating crowded
streets. Furthermore, by reducing wait times, this technique helps the restaurant and its
customers. When customers schedule and prepare their orders in advance, they can
anticipate shorter wait times when they arrive for pick-up. Customers prefer businesses
that respect their time and offer speedy service, thus this raises overall satisfaction.

To resolve the issues in the location's temperature due to the sun's rays, we
recommended a solution in which we utilize the use of a Foldable Awning to cover the
rays, minimize heat particularly in the mornings and provide a pleasant service for
customers.
