cellulose has a parallel arrangement of molecules while starch has
straight chain arrangement for amylose and branched chains for
amylopectin. cellulose has extensive hydrogen bonding between each
straight chain in parallel arrangement while starch only has glycosidic
bonds. cellulose is made entirely of beta glucose while starch is made of
alpha glucose.
