Kentucky Fried Chicken (с англ. — «Жареный цыплёнок из Кентукки»)- an international
chain of catering restaurants specializing in chicken dishes. The company is headquartered in
Louisville, Kentucky. KFC is the second largest cafe chain in the world, second only to
McDonald's. KFC was founded by entrepreneur Harland Sanders, who started selling fried
chicken dishes during the Great Depression(1929).
The original KFC product is fried chicken pieces in breadcrumbs consisting of eleven herbs
and spices. The components of this mixture, developed personally by Sanders, are a trade
secret. The company uses the slogan It’s finger lickin' good (так вкусно, что пальчики
оближешь), which was replaced by Nobody does chicken like KFC (Никто не готовит
курицу так, как KFC),then So good (Очень вкусно). Then the slogan was changed back to
the first one.
Harland Sanders was born in 1890 and grew up on a farm near Henryville, Indiana.[1] At the
age of five, he lost his father, after which Sanders' mother began working at a cannery.[2] As
the eldest son, Harland looked after the two younger children.[2] When Harland turned seven,
his mother began teaching him how to cook.[1] At the age of thirteen, Sanders left his father's
house and began to earn a living on his own. He changed several professions, working with
more or less success[3]. In 1930, he took possession of a Shell gas station on U.S. Route 25.
The station was located near the town of North Corbin, Kentucky, based on the edge of the
Appalachian Mountains[2]. By June of the same year, he had converted the station's pantry
into a small dining room, putting his own dining table in it. Sanders offered steaks and country
ham to passing motorists.
It took Sanders 35 minutes to cook the dish in an iron pan. He intended to shorten the duration
of the procedure, but he did not want to cook deep-fried chicken, considering that he makes
the dish dry, hard and unevenly fried [10]. On the other hand, when he prepared portions in
advance, he did not always manage to sell them all[1]. In 1939, pressure cookers first appeared
on the market, primarily intended for cooking vegetables[11]. Having acquired a pressure
cooker, Sanders adapted it for frying under pressure ruen and began using it in his cafe [12].
The new method reduced the cooking time to the level of deep-frying, while, according to
Sanders, it retained the culinary advantages of the old method[10]. In July 1940, Sanders
created the final recipe for his famous blend of 11 herbs and spices[13]. He never fully
disclosed it, however, mentioned the use of salt and pepper. Sanders claimed that all the other
ingredients "are on everyone's shelf"
