Right ingredients, fresh ingredients, and neatly assembled c contains cheese, substitute white cheddar cheese. • For Big Breakfast and Big Breakfast with Hotcakes, substitute 2 egg white portions for the scrambled egg portion. c Substitute steak upon request Demonstrate an order with steak substitution. • Thick Cut Steak with grilled onions is available as a substitute for bacon or sausage on any breakfast platter or sandwich. • Substitute steak patty with grilled onions for the bacon or sausage portion. Assembling Breakfast Platters Put on clear or white disposable gloves • Always wear clear or white disposable gloves when assembling breakfast entrees and sandwiches. c c Use dedicated utensils for assembly • Canadian bacon, sausage, or steak patty with onions: use a dedicated meat Hutzler bent spatula or tongs. • Egg white: use a white slotted egg spatula or tongs. • Folded, round, or scrambled eggs: use a dedicated egg Hutzler bent spatula or tongs. c Hotcakes only Discard expired products Why is it important to discard expired products promptly when the timer sounds? • Always discard product when the maximum holding time is reached. This ensures hot, fresh, quality product for our customers. • Record discarded products on the waste sheet. 1 Heat hotcakes or remove an order from the universal holding cabinet (UHC). 2 Attach the lid and slide the product into the heated landing zone (HLZ). c Hotcakes and Sausage Heat hotcakes in the Q-ing oven • To heat hotcakes, place 3 thawed, refrigerated ready-to-heat hotcakes on the breakfast entree base. – Hotcakes and Sausage or Big Breakfast with Hotcakes: place the hotcakes in a stack on the left side of the breakfast entree base. – Hotcakes only: fan the hotcakes to fill the breakfast entree base. • Heat up to 2 orders at a time. • For Q-ing codes, refer to the Q-ing Station Guide. For more information refer to the Q-ing and Toasting TSOC. c Tear bacon in half • When a build calls for half-strips of bacon, tear the bacon during the sandwich assembly. • Grasp both sides of the bacon strip with thumbs close to one another in the center of the strip. • Tear the bacon strips in the center for equally sized strips. If you grasp the strip too close to the ends, the pieces will not be equal in size. c Substitute egg whites upon request Demonstrate an order with egg white substitution. • Egg whites are available as a substitute for round, folded, or scrambled eggs on any breakfast platter or sandwich. • For breakfast sandwiches, substitute 1 egg white portion for the round or folded egg portion. October 2014 (10/22/14) 3 Breakfast Assembly Assembling Other Items Bacon as a side order or added to an entree • Bacon as a side order: add 2 full strips of bacon to a breakfast entree base, cover with lid. • Bacon added to a sandwich: add 2 half strips. • Bacon added to a breakfast platter: add 2 full strips of bacon to the breakfast platter close to the edge of the platter next to the eggs or hotcakes. The bacon should not be placed over the eggs. Scrambled eggs as a side order • Add 1 portion of scrambled eggs to a breakfast entree base, cover with lid. Bagel only 1 Pull wrap containing freshly toasted bagel from the initiator. 2 Apply liquid margarine in a circle to both the crown and heel, using the squeeze bottle with a white cap. 3 Add crown on top of heel. 4 Wrap in a bagel pouch and slide into the HLZ. Biscuit only 1 Pull wrap containing biscuit from the initiator. 2 Wrap and slide into the HLZ. English muffin only 1 Pull wrap containing freshly toasted English muffin from the initiator. 2 Apply liquid margarine in a circle with a slash to both the crown and heel, using the squeeze bottle with a white cap. 3 Add crown. 4 Wrap and slide into the HLZ. McGriddles only 1 2 3 4 Heat griddle cakes or remove an order from the UHC. Place griddle cake on 4-in-1 wrap, on the top red icon. Place second griddle cake, Golden Arches Logo facing up, on top.
