PASTRY SCHOOL BAYON EDUCATION & DEVELOPMENT អង្គការបាយ័ន អប់រ ំ និង អភិវឌ្ឍន៍ The situation of education in Cambodia • Difficulty for families to pay for their children’s education • Insufficient infrastructures • Limited access to higher education (university or vocational training) Early marriage, unstable jobs Limited decent jobs for young people Young women endure family pressure Pastry in Siem Reap: a real career opportunity The city welcomes millions of tourists every year and an increasing number of hotels and restaurants. However, those establishments have difficulties finding qualified workers, able to meet the high expectations of clients. Indeed, the existing vocational trainings in Siem Reap are either unaffordable by most youth, or free as offered by NGOs who are overwhelmed with demands. Moreover, they are rarely reserved to girls. Our project of creating a vocational training in pastry met: • the needs of the local population who doesn’t have access to those types of training and therefore to a stable job with a decent salary; • the needs of the expanding tourism and catering sectors. bcdefg PASTRY SCHOOL BAYON EDUCATION & DEVELOPMENT អង្គការបាយ័ន អប់រ ំ និង អភិវឌ្ឍន៍ A vocational training for underprivileged women A free training The training starts in September and lasts 11 months, including 2 internships (six and ten weeks) in our partner hotels and restaurants in Siem Reap. This is an important part of the training as it gives the students experience, and help them accustoming to their future working environment. We also provide the students with a free accommodation, a bicycle, a lunch from Monday to Friday as well as monthly subsidiary money to help them buy food. The pastry classes: 4 hours a day Practice classes • The students are trained in basic pastry techniques, they learn how to use the different utensils as well as a professional kitchen equipment. • They learn how to cook perfectly dry cakes, fresh pastries and bakery. Theoretical classes They cover: • Recognize the different types of ingredients and their quality • Understand and reproduce a recipe • Do a technical sheet Strong awareness to hygiene and presentation • Personal hygiene and professional attitude • Hygiene and security in a professional environment: the kitchen The complementary classes • Intensive English classes, which are necessary to anyone willing to work in the tourism sector. • Calculation in order to be at ease with counting and unit conversion. • IT classes to be able to use a computer, send emails and use basic softwares such as Word and Excel. • Introduction to business: accounting, stock management • Personal development to help them be independant and self-confident and prepare them to apply for a job: writing a resume and a cover letter and doing a job interview. bcdefg PASTRY SCHOOL BAYON EDUCATION & DEVELOPMENT អង្គការបាយ័ន អប់រ ំ និង អភិវឌ្ឍន៍ Who are our students? Selection criteria To apply for the training, the candidates must match the following criteria: • being aged between 17 and 25 years old • having at least a sixth grade education level • the family’s monthly income must not exceed an average of $35 per person • being motivated, honest, hard working and having a strong team spirit Some examples of the families’ living conditions Selection process The candidates fill and send an application form to Bayon Pastry School explaining their family’s condition and why they want to join the training. A first selection is made and the concerned students attend an oral and written khmer test as well as a general knowledge test. Based on the results, a second selection is made and our social workers visit the families to: • check if the living conditions match the information written on the application form; • talk with the parents to ensure that they are willing to support their daughter to follow the training. bcdefg Our history PASTRY SCHOOL BAYON EDUCATION & DEVELOPMENT អង្គការបាយ័ន អប់រ ំ និង អភិវឌ្ឍន៍ Our partnership with Alain Cojean: a guarantee of quality The project of the Pastry School was implemented in partnership with Alain Cojean, French restaurateur and Fabien Rouillard, Fauchon’s former Pastry Chef. They successfully created Shuktara Cakes, a Pastry Boutique in Calcutta, India, helping young disabled men. Their process, recipes and management were the base for our training programme in Siem Reap. Fabien Rouillard came in person to train our Pastry Chef before the beginning of the first school year. The project of Bayon Pastry School was entirely led by Ange Moray who worked on many aspects such as the building’s drawing, the recruitment of the staff and the students, the education programme, the establishment of partnership with hotels, the opening of the coffee shop, etc. She directed the school until November 2015. November 2013: Beginning of the building construction January to March 2014: • Establishment of partnerships with hotels for the students’ internships • Elaboration of the training programme • Elaboration the selection process May 2014: Recruitment of our Pastry Chef Sokhoeurn Morn Graduated from Paul Dubrule in 2007, she has been a brilliant pastry student and the head of her class. They can enjoy hot and ice drinks, pastries and dry cakes (such as our famous « financier » created by Cojean). August 2015: 100% of the students passed their diploma! And all of them had a job three weeks after the end of the school year, with salaries that are 20% to 100% higher than the average khmer wage. A real pride and a great motivation for the team of the NGO to pursue this project! The graduation ceremony bcdefg PASTRY SCHOOL BAYON EDUCATION & DEVELOPMENT អង្គការបាយ័ន អប់រ ំ និង អភិវឌ្ឍន៍ Success stories Srey Leak Before she joined Bayon Pastry School, Srey Leak was living in a village of Banteay Mean Chey province with her mother and her older sister. Her mother is a construction worker and her father passed away many years ago. Today, Srey Leak works as a pastry and bakery cook at Angkor Village Resort and earns $140 a month. Her family house Savieth Savieth comes from a village of Banteay Mean Chey province where she lived with her mother and three of her five brothers and sisters. With a big family to support and a very low income as a farmer, her mother couldn’t help her access a higher education. Savieth works now as a pastry and bakery cook at Paris Bakery, where she earns $130 a month. The NGO hires Chloé Marty, in charge of sales development. October 2015: Launch of bakery products An event is organized to promote the breads and croissants to the hotels and restaurants. bcdefg PASTRY SCHOOL BAYON EDUCATION & DEVELOPMENT អង្គការបាយ័ន អប់រ ំ និង អភិវឌ្ឍន៍ Our history November 2015: Claire Buisson takes over the school direction December 2015: Bayon pastry School, supplier of hotels and restaurants! Thanks to Chloé’s hard work, we regularly provide around fifteen hotels and restaurants with our products (breads, viennoiseries, pastries). The school hired someone to deliver our products every day. January 2016: Launch of the monthly Open air cinema Every month, we organize a movie night in the coffee shop. A few days before, people vote on Facebook for the movie they want to watch among a selection. By making a $4.5 donation to the NGO, they can watch the movie in the coffee shop and have a drink and a selection of cakes made by our students. So far, the event has proved to be an efficient way to raise money for the training. 24th April 2016: The team of Bayon Pastry School is happy to celebrate the 1st anniversary of the coffee shop with you! Today, you will be the first to taste the Natan, a recipe generously created specially for us by the French Natan foundation. We hope it will delight you!
