Purpose People credited with this unit standard are able to explain: the characteristics of liquid milk products produced for the New

Zealand liquid milk market; the compositional characteristics and quality requirements of raw milk used in the production of liquid milk products; the handling and processing of liquid milk products; the packaging requirements of liquid milk products; and the storage and distribution requirements of liquid milk products.

Evidence requirements

1.1 The characteristics of liquid milk products are explained in terms of their typical composition, nutritional and keeping properties.

1.2 Requirements relating to liquid milk products are explained in terms of the legislative requirements for pasteurisation and minimum component levels.

Explain the compositional characteristics and quality requirements of raw milk used in the production of liquid milk products.

Evidence requirements

2.1 Compositional characteristics of raw milk used in the production of liquid milk products are explained in terms of average composition and typical seasonal variations.

2.2 Quality requirements for raw milk used in the production of liquid milk products are explained in terms of legal requirements and use-by-date guarantees.

Evidence requirements

3.1 Handling of liquid milk products is explained in terms of requirements for the prevention of microbiological deterioration and physical damage to milk components.

3.2 The processing of liquid milk products is explained in terms of the main purposes and influences on product quality of the main stages in the processes.
