This entry level unit standard is for people whose job requires
them to understand Beef and Lamb New Zealand grading
classifications for ovine carcasses and the standard carcass
trim required by their company.
People credited with this unit standard are able to describe:
ovine fat classifications; ovine weight classifications; and the
standard carcass trim for ovine carcasses.
