NZQA Expiring unit standard 2512 version 9 Page 1 of 3 Title Demonstrate knowledge of beef grading classifications Level 2 Credits Purpose 3 This entry level unit standard is for people whose job requires them to understand Beef and Lamb New Zealand grading classifications for bovine carcasses and the standard carcass trim required by their company. People credited with this unit standard are able to describe: bovine fat classifications; bovine muscling classifications; and the standard carcass trim for beef sides. Range classifications may include but are not limited to – steer, heifer, cow, vealer, bull. Evidence requirements 1.1 Fat classifications are described in accordance with statutory and organisational requirements. 1.2 The fat depth for each class is described in accordance with statutory and organisational requirements. Outcome 2 Describe bovine muscling classifications. Evidence requirements 2.1 The description of each muscling class meets statutory and organisational requirements. 2.2 Types of carcasses to which muscling classifications apply are described in accordance with statutory and organisational requirements.
