This entry level unit standard is for people whose job requires
them to understand Beef and Lamb New Zealand grading
classifications for bovine carcasses and the standard carcass
trim required by their company.
People credited with this unit standard are able to describe:
bovine fat classifications; bovine muscling classifications; and
the standard carcass trim for beef sides.
