This entry level unit standard is for people who are employed in meat processing plants and who are required to use a brisket saw to cut briskets in accordance with organisational and overseas customer requirements.

People credited with this unit standard are able to: set up, use and clean a brisket saw; demonstrate knife use; demonstrate team-work; and comply with organisational and statutory hygiene and safety requirements.

5 Definitions

6 Althou gh this unit standard uses the form ‘saw’ the process is the same when using an air-operated brisket shear on ovine carcasses and this unit standard can be assessed against using either the saw or shear.

Set up, use and clean a brisket saw.

Evidence requirements

1.1 Brisket saw is set up for operation in accordance with organisational requirements.

1.2 Carcass is correctly positioned prior to cutting the brisket in accordance with organisational requirements.

1.3 Cutting operation ensures recoverable product is not damaged in accordance with organisational requirements.

1.4 The saw is operated in a manner that reduces the build-up of bone dust and meat at the motor end of the saw and ensures operator safety.

1.5 The saw is removed and cleaned in accordance with organisational requirements.
