People credited with this unit standard are able to describe the steps involved in comparing ovine product compliance against a written specification, and compare and report on ovine product compliance against the written specifications. Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. 4 Range Ovine products include but are not limited to – bone in – neck, breast and flap, foreshank, hindshank, square cut, shoulder, loin, shortloin, rack, rack frenched; boneless – eye of shortloin, eye of rack, eye of shoulder, striploin, backstrap, tenderloin. Evidence requirements 1.1 The phrase ‘product compliance to a written specification’ is described in terms of an ovine cutting room. 1.2 Written specifications are analysed to determine key points to be compared. 1.3 Reference material is identified in terms of industry specifications. 1.4 The process for comparing specification currency is described in terms of industry requirements. 1.5 The organisation of production flow in an ovine cutting room is described in terms of the importance of written and industry specifications. 1.6 The identification of foreign muscles during product compliance assessment is described in terms of organisational requirements. 1.7 The process for sampling product for off-line testing is described in terms of organisational requirements. 1.8 Processes for monitoring critical control points in the ovine process system are described in terms of organisational requirements. This unit standard is Evidence requirements expiring Outcome 2 Compare and report on ovine product compliance against the written specifications. 2.1 The procedure for comparing ovine product compliance is identified. 2.2 Cutting lines and muscle content are compared according to written and industry specifications. 2.3 Foreign muscles are identified and compared in accordance with written and industry specifications. 2.4 Points of specification are measured to ensure product compliance with written and industry specifications. 2.5 Information used to assess compliance is documented in accordance with industry and organisational requirements.
