Organisational requirements – instructions to staff on policies and procedures that are documented in memo, electronic, or manual format and available in the workplace.
Company specifications – product specifications set by the company relating to cuts, weights, presentation, and packaging.
Customer specifications – product specifications set by clients relating to cuts, weights, presentation, and packaging.

Range beef cuts include but are not limited to
– shank meat, knuckle, thick flank, flank steak, brisket navel-end, brisket point-end, clod, chuck tender, inside round, eye of round, outside round, flat, full rump or sirloin butt, D cut rump, short loin, striploin, ribs, tenderloin, cube roll, chuck meat.

Evidence requirements
1.1 Beef cuts are identified and named using The New Zealand Meat Specifications
Guide terminology.
1.2 The quality aspects of beef cuts are identified in accordance with company and customer specifications.

The location on a beef carcass from which each cut is derived is identified.
The quantity of cuts per carton is identified in accordance with company and customer specifications.
1.5 The disposition of unsuitable cuts is identified in accordance with organisational requirements.
