Definitions

weights, presentation, and packaging.

Range
ovine cuts include but are not limited to – boneless leg, flap, leg (long cut),
saddle, carcass, shank, square cut, shoulder, part boned leg (chump on), femur
bone leg, hind shank, reformed BRN shoulder, side, 5 rib fore, part bone and
short leg, chump, boneless chump, chump off long loin, 1 rib short loin,
boneless loin, tenderloin, 7 rib rack, chined french rack, oyster shoulder, chined
french rack (cap off).

Evidence requirements
1.1
Ovine cuts are identified and named using The New Zealand Meat
Specifications Guide terminology.
1.2
The quality aspects of ovine cuts are identified in accordance with company and
customer specifications.
1.3
The location on an ovine carcass from which each cut is derived is identified.
1.4
The quantity of cuts per carton is identified in accordance with company and
customer specifications.
1.5
The disposition of unsuitable cuts is identified in accordance with organisational
requirements.
