People credited with this unit standard are able to identify venison cuts. Company specifications – product specifications set by the company relating to cuts, weights, presentation, and packaging. Customer specifications – product specifications set by clients relating to cuts, weights, presentation, and packaging. Outcomes and evidence requirements Outcome 1 Identify venison cuts. Range venison cuts include but are not limited to – shank, topside, silverside, bone in saddle, strip loin, roast, boneless shoulder, knuckle, rump, shoulder, foreshank, rib, flap, neck, loin, tenderloin, saddle, flank steak, boneless trim. Evidence requirements 1.1 Venison cuts are identified and named using The New Zealand Meat Specifications Guide terminology.
