The menu highlights were: Chicken Cordon Bleu, Carved Pit Ham, Au Gratin Potatoes, Green Bean Casserole, Apple Crumb Pie, Gingerbread Cookies, Sugar Cookies. Mistletoe Punch, Egg Nog and more. The top three favorite menu items in both locations were: Ham, Au Gratin Potatoes & Cordon Bleu. The Commons had 1070 diners and North Point had 495 for a total of 1565 participants in this buffet. Both locations offered students the opportunity to decorate their own cookie and play some holiday games for prizes. The linens and/or special decorations, along with candlelight were much appreciated by students. As kids we were all told to eat our vegetables, and still today many of us dread eating vegetables. Well did you know that chocolate has similarities to vegetables?!! Chocolate is made from plant products that carry health benefits similar to those found in dark vegetables. These health benefits are derived from parts of the chocolate called flavonoids, which act as antioxidants. Flavonoids are great for the heart and also help to reduce blood pressure. All chocolate contains flavonoid antioxidants, but levels are eight times higher in dark chocolate. What are antioxidants? Antioxidants are dietary substances that can be found in nutrients like vitamin C, E, and selenium. Antioxidants prevent and destroy free radicals; free radicals damage your body cells by causing oxidation, cell damage from oxygen. This is what leads to destruction and dysfunction of cells within the body and can lead to chronic diseases including heart disease. Antioxidants work by preventing oxidation. This can most easily be seen when you cut an apple and it begins to brown, but if you put orange or lemon juice on it will stop the browning. These juices contain vitamin C, which acts as an antioxidant to stop the browning. Dark Chocolate vs. Milk Chocolate vs. White Chocolate? Chocolate is made from cocoa beans. The beans contain the greatest amount of nutritional value, so keeping chocolate as close to its original form will have the greatest amount of nutritional benefits. However the cocoa bean itself is very bitter, and people don’t consume cocoa like that because it is very unpalatable. This cocoa is made into chocolate; the most common types are white, milk and dark chocolate. White chocolate is the least nutritious of the three. This is because it has no cocoa solids. White chocolate is made out of cocoa butter, milk, and sugar. Cocoa butter is what is left after removing the cocoa solids, where all the nutritional value is located. White chocolate is also reduced in nutritional value by the addition of cream and large amounts of sugar. This leaves white chocolate with very low nutritional value. Milk chocolate has less of the cocoa solids than dark chocolate and has added milk solids and sugar. So it has more nutritional value than white chocolate but less than dark chocolate. Dark chocolate has the greatest amount of cocoa solids in it compared to milk and white chocolate. Because of the greater quantity of cocoa solids, dark chocolate also contains the greatest amount of antioxidants and it has the greatest health impact. In research studies, dark chocolate with over 70% cocoa contains the most antioxidants and has been shown to lower cholesterol and prevent heart disease. Doesn’t chocolate have a lot of fat? It all depends on what kind of chocolate you eat! The fat in chocolate comes from the cocoa butter. Chocolate contains three fats all in equal parts - stearic, palmitic and oleic. Oleic acid is a healthy monounsaturated fat; these are the healthy fats that are also in olive oil. Oleic acid has been shown to reduce cholesterol levels. But be careful, because chocolate also contains palmitic acid which can raise cholesterol levels and may cause other heart problems. Stearic acid has been shown to have no effects on cholesterol level and heart disease. How much is beneficial? Because chocolate does contain some unhealthy fats and some good fats, it is recommended to eat about 1oz. of chocolate a few times per week. And remember to eat try eat dark chocolate to get the antioxidants which have the greatest health effect!! Plain chocolate vs other candy bars? A Dark Chocolate Hershey Candy Bar weighs 1.45oz. If you eat two thirds of the candy bar (1oz.) you will get the maximum nutrition benefits. By eating chocolate with no caramel or nougat you will reduce unnecessary calories that don’t contribute to your health. There are more calories in two fun-size Milky Way or Snickers bars because of all the extra fillings, than slightly over half of a full-size Dark Chocolate bar. And in the candy bars you won’t obtain the same amount of antioxidants as in dark chocolate. So next time you want to say “I love you” through chocolate, go for the dark chocolate! Dark chocolate contains the most health benefits for the calories you consume. And when you reach for a piece of chocolate you don’t have to look at it as a “sinful delight” but instead as a “healthy treat”. MIDNIGHT BREAKFAST A SUCCESS The Midnight Breakfast, which was FREE to hall residents, offered a breakfast meal and opportunity to relieve stress by playing games for prizes. This event was held on the eve of Exam week, Sunday, December 16th from 10:00 p.m. – 12:00 a.m. at both the Commons and North Point Dining Halls. The event was cosponsored by University Housing. Event attendees totaled at the Commons 782 and at North Point 359 -– a total of 1141 individuals. University Housing staff kept a the games at both locations going through the night and prizes were given out to many participants. NUTRITION AND DIETARY HABITS SURVEY SPECIALTY BARS IN DINING HALLS During the month of January University Dining Service will administer the annual Diet and Nutrition survey. The survey will be offered in the dining halls with an incentive for participation. For those unable to complete one during these times we will also solicit completion of the survey on line. The results of the survey will be published in the monthly menu and will assist the management team and Registered Dietitian to enhance menus and services to you.
