FAMILY & CONSUMER SCIENCES Child Development Courses Intro to Child Development Grades 9-10 1 Trimester Non-RAI This course provides a strong background for any student that enjoys children or is interested in pursuing a career in education or childcare. Students will study the development, care and education of children from conception through age one. Career opportunities related to education and children will be explored. Developing Child I Non-RAI Grades 11-12 1 Trimester Can take one or both trimesters in either order. Learn about children as they grow and develop from ages one to six. Emphasis will be placed on the application of this knowledge in parenting and childcare settings. Physical, emotional, social and intellectual development of the child will be studied. The role of the parent or caregiver will be explored. Developing Child II Non-RAI Grades 11-12 1 Trimester Can take one or both trimesters in either order. Learn about children as they grow from age seven through adolescence. Students will explore stress, child abuse and special needs children’s impact on family. Children’s health, safety and early education are studied. Students will explore careers involving working with children. (Concurrent) Introduction to Early Childhood Education Grades 11-12 2 Trimesters Non-RAI This is an excellent course for students that intend to work in early childhood, elementary education, or childcare. This course provides an overview of the philosophy and history of early childhood education and gives an understanding of early childhood programming in developmentally appropriate practice in addition to evaluating the essentials of early childhood education. Topics include childcare settings, the role of the childcare professional, and related career fields. This course leads to a CDA Credential. (NIACC ECE 103) Child Care Field Experience Non-RAI Grades 11-12 1 Trimester Prerequisite: Minimum of 2 trimesters of Intro to Child Development, Developing Child or Early Childhood Education Planning and carrying out activities to stimulate a child’s physical, social, emotional and intellectual growth will be part of the course work. Issues concerning the health and safety of a child will be studied. Students will have opportunities to observe and interact with children of different ages at selected sites in the community. Student must have successfully completed Intro to Early Childhood Education ECE 103 or Developing Child course. (Hours count toward CDA certification.) CULINARY ARTS/RESTUARANT MANAGEMENT COURSE OPTIONS: PROSTART ProStart is an industry-based program that prepares students for careers in the restaurant and food service industries. The ProStart Curriculum includes: Basic food preparation Purchasing Inventory control Culinary nutrition and techniques Sanitation and workplace safety Hospitality management Front and back-of-house operations Menu planning and development Food cost and control Marketing The program places an emphasis on teamwork and interpersonal skills, academics, and technical skills. It requires adherence to dress, food sanitation, and safety codes. Students also have the opportunity to perform 250 documented hours of culinary-related work that can go toward the national business and industry certification. Each ProStart course (Level 1 & Level 2) is 3 trimesters in length and are most beneficial to the student when taken in sequence. Priority is given to students who have completed ProStart 1.0 & 1.1. Intro to Culinary Arts_ProStart 1.0 Grades 9-10 1 Trimester Non-RAI This introductory course provides the foundation for all other ProStart courses. Learn basic food preparation terms, techniques, safety and sanitation. Explore careers in the food service and hospitality industry. Emphasis is placed on employability skills that transfer to all career areas. (This course plus two additional trimesters is a requirement for enrollment in Food Production and Services: Comet Cafe.) Culinary Arts_ProStart 1.1 Grades 9-10 1 Trimester Non-RAI Learn communication and management essentials necessary for a successful career. Food preparation skills covered include sauces (the foundation for any great chef), soups, fruits and vegetables. Culinary Arts_ProStart 1.2 Grades 11-12 1 Trimester Non-RAI Potatoes, pasta, sandwiches and breakfast food preparation skills are covered during this trimester along with learning how to serve guests, set tables and maximize tips. Culinary Arts_ProStart 2.3 Grades 11-12 1 Trimester Non-RAI Learn about costing, purchasing, and marketing the foods you prepare. Meat, poultry, and seafood preparation techniques will be learned in this course. Strongly recommended for students interested in being in Food Production & Services: Comet Cafe. Global Foods_ProStart 2.4 Grades 11-12 1 Trimester Non-RAI Learn about the "greening" of the foodservice industry as a start to the course. Students will learn about many different cultures as they prepare cuisines from around the world. Advanced Baking_ProStart 2.5 Grades 11-12 1 Trimester Non-RAI The world of baking is explored this trimester. Everything from breads to desserts will be studied. Comet Cafe/Food Production & Services Non-RAI Grade 12 3 Trimesters Prerequisite: Students must have successfully completed 3 trimesters of ProStart courses including ProStart 1.0 to enroll in this course. Students enrolled in this course will be involved in the operation of the Comet Café. Students will be responsible for menu development, grocery shopping, cost analysis, menu pricing, marketing, food production and service. Students must be willing to pay attention to detail and work in a fast paced environment and put in time outside of class. Students will complete the National Restaurant Associations ServSafe course and exam for ServSafe Certification. Culinary Science Grade 10-12 1 Trimester Non-RAI Culinary Science will focus on a hands-on-learning approach to the vast world of food. Students will develop basic culinary skills along with knowledge of the associated sciences. This will create the opportunity for students to embark on careers in culinary arts, food science, nutrition, and beyond. HEALTH Culinary Science Grade 10-12 1 Trimester Non-RAI Culinary Science will focus on a hands-on-learning approach to the vast world of food. Students will develop basic culinary skills along with knowledge of the associated sciences. This will create the opportunity for students to embark on careers in culinary arts, food science, nutrition, and beyond. Exploring Science Careers 1.1 & 1.2 Grades 11-12 2 Trimesters Non-RAI This course provides a brief history of science related occupations in additions to today's health care delivery system and related health care issues. Professional skills and behaviors are addresses. Direct observation and research of science careers is also a component. (This class may be taken for 1 or 2 trimesters or 1 semester, if student is enrolled in Intro to Biotechnology) Exploring Science Careers 2.1 Grades 11-12 1 Semester Non-RAI This course provides a brief history of science related occupations in additions to today's health care delivery system and related health care issues. Professional skills and behaviors are addresses. Direct observation and research of science careers is also a component. (This class may be taken for 1 or 2 trimesters or 1 semester, if student is enrolled in Intro to Biotechnology) (Concurrent) Medical Terminology I Non-RAI Grades 11-12 1 Trimester May not be taken the same year as Medical Terminology II This is an introduction of basic medical terminology utilizing a programmed, word-building system to learn word parts to construct and analyze new terms. Emphasis is placed on spelling, definition, usage, and pronunciation. This course is an online course with a teacher proctor.
