LE PAN
‘A feast for all the senses’ sums up the legend that is Le Pan where chef
extraordinaire Edward Voon has put his highly individualistic hallmark on this
sumptuous new monument to French fine dining. Styled after the 17th Century
Palace of Versailles and set around a spectacular five-level wine cellar, expect an
extraordinary culinary odyssey merging magical flavours, textures and style with
exquisitely artistic dishes.
Inspired by his time spent in Europe and his culinary mentor, the legendary
Michelin 2-star chef, Paco Roncero, Voon’s incredible culinary vision has brought
him a list of awards and honours as long as his menus. At Le Pan he gamely
brings to classic French fine dining a new twist, infusing it with emotion,
sensitivity, innovation and avant-garde techniques. This youthful chef’s dazzling
track record of awards has put him at the forefront of his industry, winning
accolades from Dubai to Singapore. His pinnacle of glory came when he
vanquished nine other national teams from around the world to seize the
acclaimed title of Overall Champion in the Gourmet Team Challenge at Food &
Hotel Asia 2009.
Diners at Le Pan will be wowed by the largest private wine collection in Tianjin,
with more than 10,000 bottles from renowned estates including Chateau Lafite
Rothschild, Chateau Mouton Rothschild and Chateau d’Yquem. Downstairs a

Prepare to discover Tianjin’s pre-eminent Cantonese restaurant. Chef Tam Sek
Lun, a third-generation culinary genius from Hong Kong showcases legendary
Cantonese gems such as bird’s nest and abalone amidst lavish and luxurious
dé cor. Seamless service and stunning courtyard views complete this rare dining
experience where entertaining can be done on a grand scale or opulent banquets

Food is art at Matsunichi. This fully-fledged Japanese restaurant carries an
extensive teppanyaki menu, presided over by teppan maestro Chef Li Kok Man.
His team will dazzle you with the same acrobatic grill skills that have wowed
China’s officials and power- brokers and many top Hong Kong movie stars. Other
highlights include the sashimi, yakitori and washoku specials.

HAPPY VALLEY
A few metres from the Polo Club Hotel and overlooking pretty orchards is an
elegant steakhouse serving beef, lamb and seafood par excellence.
Discover an exceptionally relaxed and convivial atmosphere matched only by the
quality of the cuts. Happy Valley selects only the finest quality beef imported
from Australia, New Zealand, Japan and Canada. The cuts are then grilled to
perfection according to your preference. Spectacular salads and fresh greens are
available as side dishes or main courses. For non-meat eaters the superb seafood
selection provides a delectable alternative.

CONGEODLE
Experience Canto-comfort food at its heartiest and best. A collaboration with the
renowned Hong Kong congee noodle restaurant ‘Lotus Garden’, Congeodle
serves home-cooked Hong Kong local delicacies like braised beef brisket, wonton
noodles, congee and the freshest homemade dim sum. The open kitchen and its
refined yet casual setting near the lakeside makes Congeodle an ideal place for a
memorable meal with family or a nourishing late-night supper in the early hours.

DERBY CAFÉ
East meets West at its very best. Headed by Hong Kong-born Chef Poon, Derby
Café is an all-day dining outlet offering spectacular buffet breakfasts and of

light snacks to impressive main courses and irresistible desserts, not forgetting a
comprehensive drinks list. Choose from long-time favourites such as the allAmerican burger, Caeser salad or those tasty Asian delights including the everpopular Malay Laksa or Macau-style baked pork chop.

DERBY LOUNGE
This French-style glass conservatory, bathed in natural light and seamlessly
integrated into the main hotel lobby, is an almost impossibly elegant place to
enjoy high tea. But it’s as ‘magic hour’ approaches that your breath will be taken
away. There can be few better places to sip a champagne cocktail as the setting
sun’s lambent palette of pink and gold lights up the glass like a rare gem and
paints the faces of guests in gorgeous shades. By night, the conservatory doors
open out to a garden wonderland where a jazz band serenades the stars.

fine labels are also represented in the breathtakingly ultramodern cellar;
covering five stories. This rare collection is accessed by a spiral staircase.

A collection of club brand casual wear and the renowned Las Pampas brand
provide members with a variety of classically designed polo shirts, jackets and

TURFSIDE
As the saddles come off and the boots are put away, riders and players head to

‘A feast for all the senses’ sums up the legend that is Le Pan where chef
extraordinaire Edward Voon has put his highly individualistic hallmark on this
sumptuous new monument to French fine dining. Styled after the 17th Century
Palace of Versailles and set around a spectacular five-level wine cellar, expect an
extraordinary culinary odyssey merging magical flavours, textures and style with
exquisitely artistic dishes.
Inspired by his time spent in Europe and his culinary mentor, the legendary
Michelin 2-star chef, Paco Roncero, Voon’s incredible culinary vision has brought
him a list of awards and honours as long as his menus. At Le Pan he gamely
brings to classic French fine dining a new twist, infusing it with emotion,
sensitivity, innovation and avant-garde techniques. This youthful chef’s dazzling
track record of awards has put him at the forefront of his industry, winning

POLO FIELDS
Metropolitan Polo Club’s two international standard polo fields have been
expertly constructed and planted, with cutting-edge drainage technology and
two species of Kentucky bluegrass, Midnight and Nu Glade, cool season grasses
which ensure a world class playing surface. The turf is planted laterally and
mowed in a checker-board effect on the playing surface, to help it withstand the
damage caused by the polo ponies’ hooves and the flying mallets.
The polo fields, measuring 300 yards long by 160 yards wide, are of international
standard. Yet the height of the grass, measured 17mm tall, is not an observance
of a hard-and-fast rule but the result of meticulous calculation and culmination
of agronomic experience.
STABLES
Stabling is provided at the Metropolitan Polo Club for over 150 horses. These
world class stables accommodate the club’s polo ponies is comfortable and safe
surroundings.
