Purpose of Equipment: To cut bone-in and boneless meat products in a high volume
production environment.

Generalized Operating Specifications:

Dimensions:

25 inches long / wide, 40 inches deep, 75 inches high. Dimensional sizes,
such as length, width, and height are not critical to this equipment so long
as this equipment is an upright floor model.
2.2
Construction:
2.2.1
Commercial off the shelf (COTS) standard unit, no unique DeCA
requirements.
2.3
Salient characteristics that shall be provided:
2.3.1
Stainless steel cutting table, gauge plate, carriage tray, base, legs, top
cover and ball bearings.
2.3.2
Minimum 3 Horsepower (HP) motor with thermal overload protection.
2.3.3
Fixed head system does not move when blade is adjusted.
2.3.4
Removable upper and lower double flanged blade pulleys.
2.3.5
Upper and lower pulleys fully enclosed.
2.3.6
Blade guards above and below the cutting zone.
2.3.7
Hard tooth blade, 3 teeth per inch, .022 inches thick, 0.625 inches wide.

Minimum 4000 feet per minute blade speed.

Minimum dimension for meat pass through is 15 inches by 15 inches
square.

Adjustable guard stabilizer on blade mechanism.
